Ingredients

  • 10 oz shredded seasoned hash browns
  • 1 cup sour cream
  • 7 oz greek yogurt
  • 1 cup sweet frozen corn
  • 1 large poblano pepper deseeded & diced 1 cup
  • 1 cup shredded cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 3 garlic cloves minced

Instructions

  • Preheat oven to 350 degrees and grease your 9 X 13 baking dish
  • Make sure that your frozen has browns have been thawed on the counter top for at least 1 to 2 hours
  • Add your thawed hash browns to large bowl. Then add your 1 tsp salt, 1/2 tsp pepper and 1/2 tsp paprika and 3 cloves garlic minced. Evenly disperse with spatula.
  • Then add your sour cream & Greek Yogurt mixture. Fold until fully incorporated. Then fold in your corn, chopped & deseeded poblano peppers and shredded cheese.
  • Sprinkle remaining shredded cheese on top and bake for 50 minutes at 350 degrees.
  • Then devour with whatever meal your or having or have this as your meal... no judgements!
