Simple and Healthy Peach Bruschetta

This is something that I am beyond obsesed with and your family will be as well. It sounds like such a unqiue pairing, but it is THE summer pairing! Healthy, fresh & delicious.

Ingredients

  • 1 1/4 cup of peaches cut into 1/2 inch cubes about 2 ripe peaches
  • 1 tbsp FINELY chopped red onion
  • 1/4 cup chopped fresh basil
  • 8 oz goat cheese
  • 3 tsp monk fruit sweetener or cane sugar
  • 1 fresh French baguette

Instructions

  • In a large mixing bowl add in the peaces, monk fruit sweetener and red onion. Mix until throughly combined. The sugar is going to help draw out the juices in the peaches. Refrigerate for an hour.
  • Slice your baguette into 1/4 inch thick slices, rub with butter on each slice and baked at 375 degrees on baking sheet for 8-10 minutes until golden brown
  • After your peach & onion mixture has marinated, you will take it out and start to spoon about 1 tbsp amount onto the crostini slices. Sprinkle goat cheese on top and then fresh chopped basil and serve! Could also choose to serve with honey on the side, because that drizzled on top is wonderful as well!
