Quick Guacamole Black Bean Burger

These are one of my favorite veggie burgers! I hate when veggie burgers are soggy, or taste like a brick bat...hahah I mean come on, a lot of times they do! These have so much flavor and I even get my daugter and my dad to eat these. So can you say win, win?!

Ingredients

  • 6 whole wheat buns (optional)
  • 2 15 oz cans of spicy black beans drained NOT RINSED
  • 1 large carrot shredded
  • 3/4 cup GF Panko Breadcrumbs
  • 2/3 cup cooked quinoa
  • 1 4 oz can of Hatch green chilies drained
  • 1 tsp garlic powder
  • 1 tsp minced onion
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp oregano

Easy Guacamole

  • 2 ripe avocados
  • 1/4 cup salsa of choice
  • 1 small clove garlic
  • juice of 1/2 lime (about 3 tbsp)
  • 1/4-1/2 tsp salt
  • optional: fresh cilantro

Instructions

  • Cook quinoa per instructions on the back of the bag, or cook in instant pot. 1 cup of raw quinoa in Instant pot & 1 cup of water. Stir, then shut lid. Lock release valve. Then High Pressure for 1 minute. Naturally release for 10 minutes. When the screen reads LO 10, vent & then once the valve drops, open lid & fluff with a fork. Set aside. ( this could be going on while you are doing the rest below to save time or use leftover quinoa if you cooked it that week too)
  • Drain the two cans of black beans but do not rise. Pour the drained beans into a large bowl and take a fork or banana smasher and smash the black beans until they are smashed into a "paste". There will be some that smash, but still are more piece like and that's fine. You just want it mashed to where it is more paste like and moldable.
  • Add in the bread crumbs, quinoa, drained green chilies and shredded carrot. Take a spatula and combine.
  • The add in the garlic powder, minced onion, chili powder, cumin, salt and oregano. Mix until WELL combined. Then portion out your patties. Either 4 large patties or 6 small ones. Make sure you flatten them pretty well & evenly so that they cook evenly.
  • After cooking them from a method below, place guacamole on the bottom bun, place your black bean burger on top & dig in! Add tomatos, onions, crispy onion straws-- literally whatever your heart desires!

Cooking Method: Air Fryer

  • Place in Air Fryer at 380 degrees on the Air Fryer rack that way they don't stick to the bottom. Cook for 18 minutes --- 9 minutes on each side. Once it is done, if you are doing cheese, add a slice & then close the lid. DO NOT start it again, it will blow the cheese slice off. Just the warmth of the air fryer will melt it without needing it on again.

Cooking Method: Stove Top

  • Add tbsp of olive oil to frying pan and heat to medium heat. Cook on each side 9 minutes. Add more olive oil if you need to when you flip sides. Once there is about 2 minutes left on the last side, add your slice of cheese if you want.

Easy Guacamole

  • Add ripe guacamoles to a medium mixing bowl. Before you mash, add the salsa & lime juice. This will help incorporate the ingredients the best to where it won't brown fast-- especially next day ( if there is any left!) Then add in the minced garlic and salt. Mash until well combined. Then stir in cilantro if you would like!
