Mini Chocolate Graham Cracker Cheesecakes

Equipment

  • Muffin Tin
  • Hand Mixer
  • High power blender or food processor

Ingredients

  • 1/3 cup brown sugar or coconut sugar
  • 6 tbsp butter
  • 1 1/2 cups graham crackers
  • 2 tsp cocoa powder
  • 3/4 tub Truwhip orginal
  • 4 oz cream cheese
  • 2 3 oz milk chocolate bar

Instructions

Chocolate Graham Cracker Crust

  • In high power blender or food processor you will pulse graham crackers into fine pieces. 1 1/2 cups of graham crackers. Make sure that is exact. Too much graham crackers and it does not stick together as well and breaks apart too easily before adding the filling.
  • Pour graham crackers into a bowl and then add in the 2 tsp of cocoa powder and whisk together with a fork.
  • In sauce pan melt the 6 tbsp of butter, once it has melted add in the brown sugar or coconut sugar. You will then whisk the brown sugar or coconut sugar into the butter until fully combined.
  • Next you will bring it to a boil for 1 minute, then set for 1 minute. Then pour over the graham cracker mixture and with a fork coat every bit of the mixture until it is evenly dispersed.
  • You will grease your muffin tin then put 1 1/2 tbsp of graham cracker mixture in each tin, pressing down with your fingers to evenly distribute the crust. The crust will come up half was in the muffin tin.
  • Then refrigerate for at least 30 minutes before adding the filling

Chocolate Truwhip Filling

  • Melt the 2 milk chocolate bars. I like to put a microwave safe bowl over a sauce pan filled with water so it is cradling the sauce pan. Then place the bars in the bowl, turn stove top on medium high heat and it will melt the chocolate perfectly without burning. Or carefeully microwave the chocolate. Once the chocolate is melted set aside.
  • In a medium sized bowl add the cream cheese, with a hand mixer blend until smooth about 1 minute.
  • Then pour in the milk chocolate and fold it in with the cream cheese and 3/4 of a tub of Truwhip regular. Keep folding until throughly combined.

Assembling the Mini Chocolate Graham Cracker Cheesecakes

  • Once the crust is set at least 30 minutes, evenly divide the filling ontop of each mini pie crust. Smooth out with a spatula. Then refrdigerate for at least 1-2 hours.
  • Then top with more Truwhip whipped topping, crumbled graham crackers and shaved chocolate, then enjoy! Happy Holidays!
