High Protein Cheddar Corn Fritters

These high protein cheddar corn fritters have about 5 grams of protein in each one & make a perfect breakfast, lunch or dinner side dish!

Ingredients

  • 1 cup Kodiak Cake Power Flour order online using ALAINA15 anytime to get 15% off your Kodiak order!
  • 1 cup shredded mild cheddar
  • 1 cup frozen sweet corn
  • 1 egg
  • 2/3 cup milk
  • 2 tbsp oil
  • 2 tbsp chopped fresh chives use kitchen shears to "chop" much more efficient & easy way!
  • 1 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne powder
  • 1/4 tsp onion powder

Instructions

  • In a large mixing bowl sift your Kodiak Cake Power Flour then add in the rest of your dry ingredients: baking powder, salt, garlic powder, cayenne pepper, onion powder, shredded cheddar & chives. Take a fork & whisk until full incorporated
  • Pour in your milk, oil and egg. Take your mixing spatula & fold until fully incorporated, but do not over mix, just once all the mixture is "wet."
  • Next fold in your corn & set aside.
  • Heat 2 tbsp oil on your frying pan at medium heat. Cook each side for 3 to 4 minutes, each side will be crispy brown. Place on a plate with paper towel to soak up any excess oil. Then serve!

Makes 10 small fritters or 8 small but a bit larger fritters
