Easy Low Carb Fruit Pizza

This is by far going to be one of your favorite breakfast meal prep or healthy sweet treat! This fruit pizza is simple, delicious and is the best low carb crust!

Ingredients

Fruit Pizza Crust

  • 1 cup Kodiak Cake Carb Conscious Mix
  • 2 eggs
  • 1 stick unsalted butter room temperature
  • ½ cup Monk Fruit Sweetener
  • 4 tbsp cream cheese
  • 1 ½ tsp Vanilla Extract

Fruit Pizza Topping

  • 1 cup greek yogurt
  • ¼-⅓ Monk Fruit Sweeter
  • Low Carb Fruit of Choice

Instructions

Fruit Pizza Crust ( preheat oven to 350 degrees)

  • In a large mixing bowl add in 1 stick of unsalted butter brought to room temperature, ½ cup Monk Fruit Sweetener and 4 tbsp cream cheese
  • Using your hand mixer, mix for 1 minute, until the mixture starts to combine well, then add in the 2 eggs, continue to mix for another 2 minutes, which should bring it to a nice smooth consistency.
  • Add in 1 cup of Kodiak Cake Carb Conscious Mix and fold in until combined with spatula
  • On a baking sheet, place parchment paper and spray very lightly with cooking spray before pour batter on sheet
  • Pour fruit pizza crust onto sheet and smooth out into a circular pizza crust with spatula
  • Place in oven at 350 degrees for 15 minutes, then transfer parchment paper sheet with crust on it to a cutting board to cool
  • Wait until the crust is fully cooled before adding Fruit Pizza toppings. Or take a wide mouth mason jar and cut circles out of the crust to meal prep easy Low Carb Fruit Pizzas for healthy breakfast or healthy dessert.
  • Don’t top with fruit pizza topping unless you are eating that day in order to prevent it from getting soggy.
  • When ready to eat top with your fruit pizza toppings and enjoy!

Fruit Pizza Topping

  • Add Greek Yogurt to a small mixing bowl and monk fruit sweetener, continue to whisk until it is sweetened to your liking.
  • Spread on cooled Fruit Pizza Crust and then decorate with your fruit of choice!

Notes

*** This fruit pizza crust is different texture than regular fruit pizza crust. Regular fruit pizza crust is drier and more like a cookie. This recipe creates a more cake like crust that is absolutely delicious! With the low carb flour type, it was necessary for it to be cake like, so it was not too dry. You will love it!
