Easy Crock Pot Tuscan Chicken

Equipment

  • 4qt Crock-Pot

Ingredients

  • 3 to 4 boneless skinless chicken breasts 1 1/2 -2 lbs
  • 2 cups fresh spinach
  • 1 15 oz jar of your favorite Alfredo sauce
  • 1/2 cup Grated parmesan cheese
  • 1/2 cup Chicken broth
  • 1/2 cup Sun-dried Tomatoes vacuum sealed in package not in the jar
  • 1/2 tsp Dried Basil
  • 1/2 tsp Salt
  • 1/4 tsp pepper

For searing the chicken before Crock Pot

  • 1/4 yellow onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • basil salt & pepper to sprinkle over each side of the chicken breasts

Instructions

  • In a large mixing bowl add in your favorite Alfredo Sauce, grate parmesan cheese, chicken broth, chopped sun-dried tomatoes, 1/2 tsp dried basil, 1/2 tsp salt and 1/4 tsp. Whisk together until throughly combined, then set aside.
  • Add 1/4 chopped yellow onion, 3 cloves garlic minced and 2 tbsp olive oil to a large frying pan. Heat at medium heat for 2 minutes-- occasionally mixing.
  • While the garlic and onion is sautéing, season each side of your boneless skinless chicken breast with salt, pepper and dried basil.
  • Add the chicken breasts to the frying pan and sear the chicken breasts on each side for 3 minutes each. During the searing cover frying pan with fit lid or aluminum foil to seal in the heat.
  • While the chicken breasts are searing, grease the inside of your 4 qt crock pot. Then pour about 1/3 of the Alfredo mixture at the bottom of the Crock Pot.
  • Once each side of the chicken breasts have been seared add them on top of the 1/3 of the Alfredo mixture in the Crock Pot. All of the onion & garlic from the frying pan as well.
  • Then pour the rest of the Alfredo mixture on top of the chicken breasts and then turn on low for 3 1/2 hours.
  • At 3 1/2 hours, add in 2 cups of fresh spinach roughly chopped spinach. Fold in until incorporated.
  • Then take each chicken breast out and serve with fresh veggies! ( the chicken falls apart so easily because it is so perfectly tender. Therefore, take out cautiously)
