Ingredients

  • 3 1/2 to 4 pound Whole Chicken no giblets, or innards
  • 1 stick of salted butter
  • 1/3 cup of loosely packed chopped parsley
  • 2 sprigs of fresh rosemary chopped finely
  • 3 tsp salt
  • 2 tsp paprika
  • 2 tsp thyme
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp pepper
  • 6 cloves garlic sliced in thin rounds

Instructions

  • Pre heat air fryer to 360 degrees or oven to 400 degrees
  • In a deep baking pan add whole chicken breast side up without giblets & innards. In a 2 cup glass measuring cup add in 1 stick of salted butter, melt in microwave in 30 second increments.
  • Add in chopped parsley and chopped rosemary to the melted butter in the glass measuring cup, whisk together. Add salt, pepper, paprika, dried thyme, garlic powder and onion powder to a small bowl, whisk then set aside.
  • Take your whole garlic cloves, then with your knife slice the cloves thinly long ways & set aside.
  • Now with the whole chicken you will take your fingers and run them along the back of breast side up & the top to lift the skin up off the chicken. Loosen the skin on the top without breaking it, it will start to up easily.
  • Then with your hands rub the butter mixture on and under the skin, all over the chicken. Then place the garlic slices under the skin sporadically as well. Then sprinkle the seasoning mixture all over the chicken & under the skin as well.

Air Fryer Instructions:

  • Line the inside of your air fryer with parchment paper. This is key to keeping the chicken juicing during air frying. Then place your chicken on top of the parchment paper breast side up.
  • Air fry at 360 degrees breast side up for 45 minutes. Then open air fryer, flip your chicken breast side down to cook for 15 more minutes.
  • Air fry on that side until the internal temp of the chicken breast reaches 165 degrees.
  • Take out of air fryer, let rest for 10 minutes before carving
  • Then pour over the extra juices from the parchment paper over the chicken. Enjoy!

Oven Instructions:

  • Place whole chicken in the baking dish in the oven at 400 degrees. Bake for 50 minutes breast side up.
  • Then flip your chicken, breast side down to cook for 20 more minutes.
  • Bake in the oven until the internal temp of the chicken breast reaches 165 degrees.
  • Take out oven, let rest of 10 minutes before carving.
  • Then pour over the extra juices from the bottom of the baking dish over the chicken. Enjoy!
