Keto Chive Carrot Fritters

These fritters are the perfect snack, appetizer or low carb bread subsitution. They are oh so tasty with hints of chive and garlic, they are for sure to be a crowd pleaser!

Ingredients

  • 4 large carrots love to do the rainbow carrots, so 1 purple, 1 yellow & 2 orange
  • 1 egg
  • 3/4 cup Monterey Jack Cheddar
  • 2 tbsp almond flour
  • 1 tbsp chopped chive
  • dash of cayenne pepper
  • 1/4 tsp dill
  • 1/4 tsp salt

Instructions

  • Preheat oven to 425
  • In food processor shred the carrots then transfer to a medium bowl. Then add in egg, almond flour, chopped chive, cheese, dill, cayenne & salt.
  • With a fork whisk together ingredients until throughly combined. Then divide out batter so you form 6 patties. Flatten in your hand, about 1/4 inch thick, round in hand & then place on baking sheet with parchment paper or on Silpat.
  • Bake at 425 degrees for 10 minutes, then with a spatula, carefully flip them & bake for another 10 minutes until they start to get crisp. Then enjoy! Dollop of sour cream or any of the suggestions above!!
  • Reheating Instructions: LOVE to reheat in the in the air fryer on fry setting for about 3-5 minutes. Reheat in oven at 425 for a 3-5 minutes as well.
