Easy Irish Bacon Sheet Pan

Alright, does delicious and healthy sheet pans get old? No way! They are the key to my meal prepping heart. Plus make a big batch of this for the week with the family! Perfect for St. Patrick's Day coming up or Easter!

Equipment

Ingredients

  • 1 package Wellshire Irish Bacon
  • 2 lbs red potatoes
  • 1/2 green cabbage
  • 1 3/4 tsp salt
  • 1 1/4 tsp Ground Mustard
  • 3/4 tsp Pepper
  • 1/4 tsp Coriander
  • 1/4 tsp Paprika
  • Dash Cayenne Pepper
  • 3 tbsp olive oil
  • 6 eggs

Instructions

  • First dice your potatoes into bite sized pieces first, then drizzle 2 tbsp of olive oil on top. Sprinkle with 1 1/2 tsp salt, 1 tsp ground mustard, 1/2 tsp pepper and 1/4 tsp coriander, dash of cayenne pepper and toss in your seasoning mixture.
  • Layer your full sheet pan with parchment paper, then spread potatoes onto sheet pan. Bake at 425 for the first 30 minutes.
  • While the potatoes are baking, you will chop up 1/2 a green cabbage into bite sized pieces as well. Toss with 1 tbsp olive oil and then season with 1/4 tsp paprika, 1/4 tsp salt, 1/4 tsp pepper and 1/4 tsp ground mustard.
  • Take potato sheet pan out of the oven and now spread cabbage over the sheet pan. Turn oven down to 400 degrees. Bake for 15 more minutes.
  • After the cabbage and potatoes bake 15 more minutes at 400 degrees, you will turn down your oven once more to 375.
  • Then slice up your Irish Bacon into strips or bite sized pieces, depends on your preference. Then bake for 12 minutes NO MORE. You do not want to leave your bacon in there longer, because if you do it will dry out.
  • Once your sheet pan layers are done, then last layer is to add egg on top! Fix eggs to your liking and top your Easy Irish Bacon Sheet Pan.
