Easy Eggless Ham and Vegetable Breakfast Burritos

These breakfast burritos are so easy, so delicious and eggless! If you are like me who eat eggs all the time for breakfast this may seem a little out of your comfort zone, but trust me--- it is a game changer. Plus they are a lot easier to make when there aren't eggs to cook :) Enjoy this healthy, high protein meal!

Ingredients

  • 1 1/2 tbsp olive oil
  • 2 cups chopped potatoes
  • 1 cup chopped red pepper (bite sized)
  • 7 oz Ham Steak
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • 1/8 tsp cayenne pepper
  • 9 oz shredded cheese of choice
  • 6 tortillas of choice

For Freezing & Storing

  • 6 squares of aluminum foil ( I use kitchen scissors & cut a square big enough to wrap my burrito in. About 11 X 11 square or smaller, depends what tortillas you use )
  • 1 large ziplock bag to store burritos in for the freezer or fridge

Instructions

  • In a medium sized skillet add olive oil and heat on medium heat. Add in chopped potatoes and season with the salt, garlic powder, onion powder, pepper, paprika and cayenne pepper. Cook for 10 minutes on medium, stiring occasionally with spatula.
  • Next you will dice up your 7oz of ham steak into 1/2 inch pieces. Add the diced ham steak into the skillet with the potatoes and mix until throughly combined. After you will add in your chopped red peppers that are also in 1/2 inch pieces. Mix until throughly combined as well. Cook on medium low for 5 minutes.

Assembly Time

  • Cut up my aluminum foil in squares big enough to wrap the burritos in. I do aluminum foil so that if I do want to put them in the oven to heat up, you can just take the burrito out the freezer in the aluminum and put it right into the oven.  
  • Lay out each tortilla on top of the aluminum foil square and take 1 to 2 tbsp of the mixture in the center of each tortilla and sprinkle 1 1/2 oz of cheese on top.
  • Then roll up your burrito, right side in about 2 inches, then pull up the bottom to pull in the ingredients and fold over the side– roll tight! Then since you laid the tortilla on the aluminum you can then roll aluminum foil around it right away. Put in the freezer or refrigerator. In freezer up to 3 weeks. In refrigerator for up to 5 days.
