- 1 Taylor Farms Southwest Meal Kit
- 1 lb deveined shrimp
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp paprika
- 1 large lemon
Optional
- 4 oz cotija cheese to sprinkle on top when done
- 1 lime to cut into wedges to serve with
- black beans
- corn
- cilantro
- cherry tomatoes
In an 8 X 11 baking dish shrimp and toss in the juice of 1 lime and pour over the top of the shrimp. Flip over the shrimps to coat with the lime juice
In a small bowl whisk together the salt, cumin and paprkia. Then sprinkle both sides of the shrimps with the seasoning, rubbing it in with your hands.
In frying pan heat 1 tbsp of olive oil on medium heat for 1 minute. Add the shrimpe cook for about 2 minutes on each side until they turn white/pink and are opague ( no longer see through)
Then set the shrimp on a plate while you cook the Taylor Farms Southwest meal kit per the instructions on the bag in same frying pan.
Then lastly, I add the cotija cheese in to have it melt over the rice and veggies.
Plate the delicious Southwest Rice mixture onto a plate with the delicious shrimp on top. Sprinkle with more cotija cheese, black beans, corn, tomtatoes and fresh cilantro and serve with a lime wedge. Enjoy!
