Ingredients

  • 1 Taylor Farms Southwest Meal Kit
  • 1 lb deveined shrimp
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1 large lemon

Optional

  • 4 oz cotija cheese to sprinkle on top when done
  • 1 lime to cut into wedges to serve with
  • black beans
  • corn
  • cilantro
  • cherry tomatoes

Instructions

  • In an 8 X 11 baking dish shrimp and toss in the juice of 1 lime and pour over the top of the shrimp. Flip over the shrimps to coat with the lime juice
  • In a small bowl whisk together the salt, cumin and paprkia. Then sprinkle both sides of the shrimps with the seasoning, rubbing it in with your hands.
  • In frying pan heat 1 tbsp of olive oil on medium heat for 1 minute. Add the shrimpe cook for about 2 minutes on each side until they turn white/pink and are opague ( no longer see through)
  • Then set the shrimp on a plate while you cook the Taylor Farms Southwest meal kit per the instructions on the bag in same frying pan.
  • Then lastly, I add the cotija cheese in to have it melt over the rice and veggies.
  • Plate the delicious Southwest Rice mixture onto a plate with the delicious shrimp on top. Sprinkle with more cotija cheese, black beans, corn, tomtatoes and fresh cilantro and serve with a lime wedge. Enjoy!
