Easy Sausage Spinach Tortellini Soup

One of my all time favorite things of Fall, is SOUP. I love how you can make a big pot of delicious soup... like THIS one. The best is to freeze the other half for another meal for the week or in individual containers to freeze to take out for lunches! So dive yourself into this yummy, perfect soup for your next dinner time!

Ingredients

  • 3 tbsp olive oil
  • 1 15 oz can of tomato sauce
  • 1 48 oz Chicken broth + 1 8oz chicken broth
  • 2 14.5 oz cans of Fire Roasted tomatoes
  • 1 15 oz White Cannellini beans drained & rinsed
  • 2 8 oz packages of tortellini we like the cheese ones or spinach
  • 8 chicken sausage links cut into rings about 1/8 inch thick
  • 1/2 yellow onion diced
  • 3 garlic cloves minced
  • 1 cup spinach
  • 1 1/2 tsp basil
  • 2 tsp salt
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Chile Con Carne Seasoning this has ancho Chile, tomato, paprika, garlic, Mexican & greek oregano, arrow root, onion & bell pepper-- all wrapped into one seasoning added the link here
  • ^^ if you don't have that I would do 1/4 paprika oregano, chili powder -- however that spice is phenomenal! Worth purchasing
  • 1 tbsp arrow root powder + 2 tbsp warm water
  • 1/2 cup Half & Half

Instructions

  • In a 6 quart or bigger soup pot add in the olive oil & turn it to medium heat. (linked one like mine, that is my favorite here) Then add in the diced onion & minced garlic. Let that simmer & brown from 3-4 minutes. Then add in the sliced chicken sausages. Cook in onion & garlic for a few minutes, then add 1 tsp cumin, 1 tsp basil & 1 tsp salt on top of the chicken sausages. Cook for another 2-3 minutes, mixing the seasoning around the sausage.
  • Then add in tomato sauce, roasted tomatoes, chicken broth, 1/2 basil, 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp onion powder & 1 tsp of the Chile Con Carne seasoning. Stir in seasoning, with the tomato sauces, broth & chicken sausages. Then bring to a boil & cover, then reduce to simmer. Let simmer for at least 1 hour, 2-3 if you can.
  • Then add in tortellini & bring to a boil, then reduce to simmer again for 5 minutes, to allow tortellini to cook. Then reduce to low heat. Add in half & half and 1 cup spinach broken apart & the can of drained beans. Next, put 1 tbsp arrowroot in small glass dish & add 2 tbsp warm water, then mix until throughly combined. Then add in arrow root to the soup, turn up the heat to medium (not boiling) & figure 8 the arrow root into the soup until desired thickness (about 1 minute or 2). Then let simmer on low until ready to serve!
  • When ready cut up fresh basil on top of the soup & add cheese on top like parmesan etc!
