Ingredients

  • 1 stick unsalted Dierbergs butter
  • 1 ½ tbsp fresh chopped chives
  • 1 tbsp fresh oregano chopped
  • ½ tbsp fresh lemon juice
  • 1 clove garlic minced
  • ¼ tsp salt

Smasher Potatoes:

  • 1 pound small new potatoes
  • Olive oil
  • 2 tsp salt
  • 1 tsp pepper

Instructions

Preheat oven to 425 degrees

  • In a large stock pot fill up halfway with water. Add in your new potatoes. Bring water to a boil and boil for 15 minutes until you can stick a fork through your potatoes
  • While the potatoes are boiling. You will make the garlic herb butter. Add your softened butter to a mixing bowl. Add in your chives, oregano, minced garlic, salt and lemon juice. With a hand held mixer, mix until fully combined and smooth. Cover and refrigerate until potatoes are ready to go in the oven
  • Once you are able to pierce the potatoes with a fork, take each individual potato & spread them out on the baking sheet ( I love my silpat!)
  • Spray the bottom of a pint glass with olive oil. Then take the pint glass & press down the bottom of the glass on the center of the potato to begin smashing them. Some may be bigger than others & not stay all together so as you smash, hold the outsides together with your fingers.
  • Spray the tops of the smashed potatoes with olive oil or drizzle on top. Then sprinkle generously with salt & pepper.
  • Take your butter out of the fridge at this point to soften on the counter. Then bake your potatoes at 425 for 20 to 25 minutes or until crispy brown on the edges
  • Next take your marble serving board, and with a knife start spreading your butter on the board or make a fun tree design like you see above in the pictures!
  • Place your smasher potatoes around the garlic herb butter on the board, then take one of the smasher potatoes, spread the butter on top and enjoy!
