Vanilla Iced Cold Brew Latte

Move over Starbucks... Here we have our own Vanilla syrup & amazing cold brew creation. Now I do not make my own cold brew, I buy the PLAIN Chameleon Cold Brew from the store. It is the concentrate-- I'm putting the link here so you can see it. What I love about this cold brew is it is literally organic coffee & filtered water. Nothing else. So you are already a leg up from a lot of the cold brews that have a lot of added ingredients or sugars. I have seen it at both Whole Foods & Target.

^^ Just so you know when you click on it the price will look like 72 dollars or something--- but it is not that expensive in the store, that is for a large case of them :)

So I start off with the Chameleon Cold Brew & make my own Vanilla Syrup-- so simple & so easy.

Vanilla Syrup:

1/3 cup water

1/2 cup coconut sugar

1 tsp & 1/4 tsp vanilla extract


1. In a sauce pan add the water and sugar. Take a whisk and whisk it until all the sugar is dissolved into the water. Move the sauce pan around-- moving liquid all the way to one side to see if any residue is at the bottom-- if so keep stirring to dissolve, 1-2 minutes.

2. Next stir in the vanilla extract. Now turn on medium to high heat. You want to bring this mixture to a FULL boil. This means the whole entire surface of the liquid is boiling. It takes a little bit--- it will be where like 3/4 of the top is boiling and you may think that is good enough-- but just wait a TINY bit longer until it is all boiling. Let it boil for 1 minute (time it) Then remove from heat and let it cool all the way before putting it into a container. Then keep in refriderator and enjoy for 7-10 days! You could even use it for more than coffee-- like over waffles, pancakes or ice cream of course :) SO SIMPLE and you get to skip all the added sugars, additives and JUNK in other syrups!

3/4 cup Chameleon Cold Brew BLACK coffee

1/4 cup unsweetened vanilla almond milk (milk of your choice can substitute here!)

1-3 tsp of vanilla syrup ( HONESTLY as much as you want-- I like it less sweet, but use as much as you want)

Ground cinnamon

Organic Valley Half & Half ( leave out if you'd like)

*** Coffee is very personal! Everyone has their way of ordering their drink of course-- so the above are for how I like it-- make any personal changes you need to for milk, yes half and half or not


1. In a drink shaker, add 4 ice cubes and pour in cold brew and almond milk. Then sprinkle as much cinnamon as you'd want on top of that. Next add in the vanilla syrup. Shake WELL, I'd say about 8-10 shakes.

2. Then pour over ice and add in a bit of half & half if you'd like for that yummy swirl you see above.

PRO TIP: I like to drizzle a little bit of the syrup on the sides of the cup I am going to pour the coffee into before I add the ice, then when you pour the coffee in it is extra yummy :)
