Tater Tot Casserole

Okay. I love this recipe! It is a great comfort meal on these cold winter nights!! It also reminds me of something you would feel really guilty about eating at a Drive in Dinner-- but this one is made with all quality ingredients and a lot cleaner than others would be out and about :) So how could I not be A OKAY with this! ALSO this recipe is a one pot wonder, so it is a double winner in my book!


Ingredients:

-About 12 X 16 baking dish--- this dish is a Hearth and Home deep dish pan from Target, I LOVE IT. It is the perfect amount of depth for casserole dishes. Just make sure it is a larger baking dish

-2 pounds ground chicken thigh

-2 tbsp olive oil

-1 32 oz frozen corn

-1 15 oz 365 can of drained black beans low sodium

-1 4 oz can of HATCH mild green chilies

-1 12 oz bag of 365 Mild Shredded Cheddar + a little extra for the top

-2 8 oz bags of Frontera Green Chili Enchilada Sauce (medium)

-2 19 oz Alexia Crispy Seasoned Potato Puffs with roasted garlic and cracked black pepper (these are our favorite little treat!)

-1/2 diced yellow onion

-2 cloves garlic minced

-salt and pepper to taste

Seasoning for the meat

2 tsp chili powder

1 tsp oregano

1 tsp cumin

1/2 garlic salt



Directions:

1: Put meat seasoning in a bowl and whisk together, add 1/2 cup water to get it all dissolved

2: In a large stove top skillet, heat on medium heat olive oil, chopped onion & minced garlic cloves and saute for 3 minutes and then add in the chicken thigh

3: Cook until there is no pink left in the meat and drain excess liquid, then add in the meat seasoning liquid and bring to a boil and reduce to a simmer for 5 minutes

4: Next pour both packets of enchilada sauce, 12 oz of corn (so half the bag OR more if you'd like.. I like adding a little more corn so I get the big bag), black beans drained, green chilies and mix well

5: Turn heat to medium high again and bring it to a boil, then turn down to medium low and let it simmer for 8-10 minutes, stirring occasionally--- now taste the mixture and add salt and pepper to taste

6: Next add in the cheddar cheese and mix well, then pour all of that picture into the GREASED pan of your choice--- remember a large and deep one like I mentioned above

7: Then take the tater tots and line them on top like you see below. This takes about a bag and a half. Then place in the oven that was preheated to 375 degrees, and cook for 35-40 minutes. I like to do 40 because I like to get the tots crispy! Then take it out and drizzle cheese on top of the tater tots and put it back in for 10 minutes. THEN YOU ARE READY! I am so excited for you all already!


Feel free to add sour cream and cilantro to the top!! So yummy!
