Taquitos Quick & Easy

If you could not tell from any of my previous posts--- I sure love my Mexican food. I recently had a really good sweet potato vegetable taquito and I was determined to create a recipe myself that I had chicken :)

See below for the recipe:


* This recipe makes 12 taquitos

3 medium sized chicken breasts poached (I will put below how I poach mine!)

1 8oz block of cream cheese

1 cup shredded Monterrey Cheddar mix

1/2 cup My Brothers Salsa-- Black Bean and Corn(needs to be a black bean and corn salsa)

1 clove garlic

1/2 tsp garlic salt

1 tsp Old Venna Red Hot Riplets spice

2 packages of the 365 Corn & Flour tortilla they come in 6

Directions to Poach Chicken:

The ingredients below depend on how much chicken you are poaching, I am putting my recipe for when I poach a whole package of chicken--- I used this chicken for the Chicken & Wild Rice casserole on my blog as well. It is always a great idea to poach it all together so you can make another meal as well like a casserole or chicken salad etc. Options are endless!

1 package of Pine Manor Farms Boneless Skinless chicken breasts

12 peppercorns

Half a yellow onion

1 tbl Pink Himalayan Salt

1 tbl garlic powder

- Put all of these ingredients in a big soup pot with water covering all the chicken about 3 to 4 inches above

-Bring to a boil and then simmer for 20 minutes

While the chicken is poaching (if you hadn't already poached it) start on the filling! It was even easier to throw this together having the chicken ready to go:)


-Preheat oven to 350 degrees

-Add the garlic clove, cream cheese, Monterrey cheese, Old Venna, Brothers Salsa and garlic salt into a food processor and blend thoroughly

-Once chicken is poached let it cool for 5 or so minutes and shred with a fork in a medium sized bowl

-When it is shredded let it cool for another 5-10 minutes

-Once it is cooled you will add in the filling you just processed in the food processor

What the amount of filling looks like in the tortilla

- Dampen paper towel and wrap each tortilla in it and zap in the microwave for 30 seconds each

-Then take about 3 spoonfuls of fulling a put it in the middle of tortilla as seen above, there will be enough filling for all 12

-Once you have placed the filled, roll it hot dog way-- starting from the side on the left if looking at the picture

-Then place on Silpat (which I highly recommend) or baking sheet as seen below

- Place the tray with all 12 of your scrumptious taquitos in the oven for 10-15 minutes-- keep an eye on them, take them out when they are as crispy as you would like them!
