Sunday Scramble

On this super rainy and cold Sunday, a scramble is necessary for sure! Especially when it is Daylight Savings time:) This recipe was something I had remembered seeing from Jimmy Dean sausages at some point, so I decided to try and recreate it! I used Amylu organic maple sausages instead! At Costco they have those sausages for very cheap and have 3 packages in one-- which is perfect!


Makes 4 servings

1 package of Amylu organic maple chicken sausages (14 minis or 7 large links)

2 apples

1 sweet potato & 1 russet potato

1/4 onion

1 tbsp butter

2 cloves garlic

Cayenne Pepper/Salt/Pepper to taste

1 tbl olive oil + more in the pan if need be when caramelizing the potatoes

2 eggs per serving (6 all together if serving all at once)

2 tbsp of coconut sugar


1: Cut the chicken sausage links the width of the sausage not the length side. So you have circle pieces about 1/8 of an inch wide and put them into a bowl and set aside

2: Cut up the potatoes into small cubes, dice the 1/4 of the onion as well and mince the cloves of garlic on top of the onion

3: Cut up the apples in cubes and heat large skillet to medium heat and place the tbsp of butter in it. Wait for it to melt and then add the cut up apples to skillet

4: Cook the apples for about 5-10 minutes, mixing them into the butter, then drizzle the 2 tbsp of coconut sugar on top of them and continue to cook them.

5: Once the apples are cooked and sauteed in the butter and sugar put aside in a bowl and place a plate on top to keep the warm until you are ready to mix them together

6: Next steam your potatoes with your method of choice. Once you can stick a fork through them put them aside in a bowl

7: Add olive oil to the skillet on medium high heat and add the onion and garlic to saute, after about 2 to 3 minutes add the cut up chicken sausages, cook for 5 minutes then add in the potatoes to get golden brown (Add in extra olive oil if they are not getting brown enough for you liking) Sprinkle Cayenne Pepper on top of the potatoes as well as salt and pepper to taste

8: After another 5 minutes of potatoes and sausages cooking together mix in the apples

9: At this point you can decide if you want to keep them on the skillet to caramelize more together, or eat right away!

10: Once the skillet mixture is done, in a small skillet heat up 1 tbsp of olive oil or 1 tbsp butter to fry the eggs in and add salt or pepper to taste, then you will put them on top of your skillet mixture and ENJOY!:)
