Southwest Stuffed Chicken

‼️SOUTHWEST STUFFED CHIX 🔥🤯⁣ ⁣ This is so easy & so freaking delicious. Years ago we use to get a southwest chicken from Trader Joe’s, but they stopped selling it 😩⁣ ⁣ So when I had @sietefoods nacho tortilla chips for the first time it reminded me of the coating of those SW chix—so it inspired me to re create this & boy oh boy it is perfect & BONUS it is gluten free because @sietefoodsare GF👌🏻 Check below for all the easy details! 👇🏻⁣


Ingredients: + 3 chicken breasts ⁣ + 1 1/2 bags of @sietefoods nacho tortilla chips ⁣ + 1 cup Monterey cheddar cheese shredded ⁣ + 4 oz @organicvalley cream cheese ⁣ + 4 oz Hatch green chilies⁣ + 1/2 cup @organicvalley buttermilk⁣ + 1 egg⁣ + salt & pepper to taste ⁣ ⁣

Directions: • In batches put the tortilla chips in a high power blender & once all are blended into crumbs put into a large bowl and add the 1⁣ cup cheese & whisk, then set aside ⁣ ⁣ • In another large bowl add buttermilk & egg & whisk together & in a small bowl add cream cheese & green chilies— not drained. Then mash the cream cheese & green chilies together until almost smooth ⁣ ⁣ •Next take each chicken breast and slice long wise in the middle, so you can stuff, stop before you slice it completely. Sprinkle each breast outside & inside with salt & pepper. Then dip each ⁣chix breast in the egg/buttermilk mixture, then dip into the “breadcrumbs”/cheese mixture until the chicken is fully coated inside the place you sliced & outside. Repeat for all 3⁣ ⁣ • Lastly divide out the cream cheese & green chilies mixture into 3 & stuff the insides of the coated chicken⁣ ⁣ 𝐈𝐧 𝐨𝐯𝐞𝐧: ⁣ + heat to 375 degrees in a 9X11 dish sprayed & cook for 20-25 minutes or until no pink ⁣ ⁣ 𝐈𝐧 𝐚𝐢𝐫 𝐟𝐫𝐲𝐞𝐫: @gourmia ⁣ + add to fryer basket at 400 degrees & cook 10 minutes on one side, then flip for 10 minutes on the other. Adjust more time depending on thickness & turn down to 370 if they are really large & you are worried they will get too crispy😊 ⁣ ⁣ Enjoy!! ⁣
