Shortcut Eggplant Parmesean

I 😍 eggplant parm, but do not love all the oil it takes to fry those beauts up, not to mention all the flour you use OR salt to dry them out. 💁🏽‍♀️⁣⁣ ⁣⁣ So I tried this simple solution & let me tell you this is so stinkin easy. I’m mad at myself for making eggplant parm the hard way all those years! This will be in our dinner rotation for sure 🙌🏻⤵️⁣⁣ ⁣⁣ (( keep in mind my instructions below were with 3 eggplants. The leftovers were phenomenal!))⁣⁣ ⁣


Ingredients/ Directions : •Pre heat oven to 350 degrees ⁣⁣ • Grease oven safe dish. I did my deep 9 X 11 from @magnolia 💕⁣⁣ +Cut the eggplant in cubes with skin on. Cut up the amount of eggplant needed for how many people are eating. I’d say one decent sized eggplant would be two servings 👌🏻⁣⁣ ⁣⁣ + In a deep stove pan/ pot add 3 tbsp olive oil, 4 garlic cloves & half an onion, let that start to simmer then add in the cubed egg plant. Cook until the eggplant starts to get brown & as crispy as it can get. While cooking continue to season with: salt, pepper, garlic powder, Italian seasoning & a few dashes of cayenne, to taste. About 10-15 minutes. Add more oil if need be (( but seriously not nearly as much as when frying them individually with flour))⁣⁣ ⁣⁣ + Pour one jar of favorite red sauce( We tried @wholefoods Portebella Mushroom red sauce for the first time & it was perfect! ) At the bottom of the dish and spread evenly. Sprinkle a layer of Fiesta shredded cheese @wholefoods . I love that one because it has a great variety of cheeses & a kick to it. ⁣⁣ ⁣⁣ + Then pour eggplant mixture on top evenly. Do not need to mix it into the sauce. It will sink down into the cheese layer. Then thinly slice whole 8oz motzarella & layer it ontop of the eggplant mixture. Place in oven until the cheese starts to brown!⁣⁣ ⁣⁣ *then serve ontop of your favorite noodle, garnished with fresh basil!
