Scrumptious Pizza Quesadilla
Who is always down for pizza?? I hope everyone raised their hand, because I am raising both hands right now! :) Get ready for this PIZZA-DILLA.. I am also all about making life easy & simpler, especially right now. Today I went to the grocery store for our two week haul. I dread going & I know I don't have to tell you all about the anxiety & just worst the feelings you feel when going. You feel guilty & then paranoid... so many feelings. I am so thankful though for the workers, doing whatever they can to make sure we can get what we need & for the ability to get groceries.
So before I go, I plan out recipes two weeks in advance... I know that sounds crazy talk, but it is the best way for me to make sure we still stay on budget money wise & do not go out to get things. My biggest thing is planning meals where I can use ingredients more than once. So that is where meals like this come in! We will also be using this pizza sauce for our Air Frier Chicken Parmesan & the mozzarella from this recipe as well for actual pizza later down the road next week :) So my biggest tip, is writing out your recipes, seeing which ones can cross cut ingredients & planning things out that way!
This recipe is OH SO simple & a great way to get that pizza fix in quick. I also did a quick tutorial on Instagram stories ( @honestfoodie_blog) & saved it to high lights to check out. Enjoy!
2 large tortillas
1-1 1/2 cups cheese ( use a mixture of whatever you have on hand! Here I used 1/2 Mozzarella & 1/2 Monterey Jack Cheddar mix)
2 tsp pizza seasoning ( linked my favorite here)
1/4 cup pizza sauce
1 tbsp olive oil or olive oil spray
Then Toppings of your choice:
What is pictured, 8-10 pepperonis, 2 tbsp chopped black olives & 2 baby bella mushrooms sliced!
What is so fun about this recipe is you can make this vegetarian, you can make it meat lovers... you can make it whatever you want! Also make half what someone else in your family would like & the other half yours. These are fun to make with the family :)
1. Turn on stove at medium heat, give your large frying pan a spray with avocado oil/olive oil or 1/2 tbsp olive, let heat for 1-2 minutes. Then sprinkle on 1 tsp of the pizza seasoning, BEFORE you even put the tortilla on-- this is HUGE, adds that big pop of flavor flav! It will have the seasoning cook into your tortilla. Then layer on your first tortilla.
2. Next pour on your pizza sauce & spread out evenly over the tortilla. Sprinkle over half of the cheese, the toppings you are wanting to add-- like I mentioned above like mushrooms, pepperonis, black olives-- then the rest of the cheese.
3. Layer on the second tortilla. Then spray the top, sprinkle the last of the pizza seasoning. Let it cook on that first side until it starts to crispy about 5-8 minutes, then flip. Cook again until nice & crispy on the other side. Then let cool for 1-2 minutes, then slice & enjoy!!
