Quinoa Vegetable Salad

I love quick, healthy and easy lunches that will keep me full and satisfied throughout the day! I also love to be able to have them prepped and ready to go to last me through the week. This recipe does just that! It is perfect for a quick meal prep on Sunday and the kale does not get soggy easily and holds up very well.


1 cup cooked tri-colored quinoa mix

3 cups chopped fresh kale

1 can of drained Cannellini beans

1/2 cup chopped black olives

4 tbsp sunflower seeds

10 cherry tomatos diced

2 whole artichoke

1/2 cup sour cream

2 tbsp light olive oil

4 tsp stone ground mustard

1 tsp honey

dash of cayenne pepper

salt & pepper to taste

At the end:

1 wedge of lemon

sprinkle feta cheese

BONUS: homemade croutons :)


1. Cook 1 cup of quinoa per cooking instructions on package. I use my insta pot to cook my quinoa. Then set aside to cool. I have made the quinoa the day before and left it in the fridge until I put it together the following day-- sometimes that saves me some time! Then clean and de-stem the kale and take a knife and chop it up-- 3 cups worth. Drain & chop black olives, dice up tomatoes, cut up the artichokes & drain the cannellini beans. Place all of these vegetables & quinoa into a medium sized bowl, grind pepper & sprinkle salt over the mixture and toss

2. In a separate small bowl you will start to make the dressing. Pour sour cream olive oil, ground mustard and honey and whisk together. Then season to taste with a dash of cayenne and salt and pepper.

3. Next toss the mixture above with the dressing and let it marinate in the fridge for at least an hour. I like to do this for meal prep and then have it ready and marinated for lunches. Sometimes you may need to toss it with more dressing if preferred. Then squeeze lemon juice on top, sprinkle feta cheese AND if you are like me and love homemade croutons you can sprinkle some of those on top as well :)
