Pesto Basil BLT

Pesto, pesto, pesto... so many ways to use PESTO! I love it oh so much. I have another recipe coming up here shortly that has become a favorite combo of two of my favorite things.. using this pesto as well! SO basically this is your pesto staple recipe-- anytime you need it, make it in under 5 minutes.. skip the buying at the store! 6 ingredients.. yes ma'am! Check out the scrumptious details below! ((plus it is dairy free & you do not miss the dairy at all because of the creamy cashews in the pesto!))



Ingredients for Pesto:


1 cup freshly chopped basil

3 tbsp raw cashews

½ cup light olive oil

1 clove garlic

2 tbsp lemon juice

½ tsp salt + fresh pepper to taste


Directions:

In a food processor combine all ingredients below. Make sure you cut the garlic clove in a couple pieces, then process until creamy! Should take about 3 minutes. You know it is done when you do not have any gritty pieces of cashews left. Then refrigerate while you get the rest of the BLT ingredients together!


Ingredients for BLT wrap:

1 large tortilla wrap ( I prefer whole wheat, but we had flour tonight)

1 ripe tomato

1 ripe avocado

2-4 pieces of Maple Bacon OR turkey bacon

2 pieces of leaf lettuce

EBB (Everything But Bagel) seasoning

Basil Pesto from above to drizzle all over :)


Directions:

1. I cook my bacon in my air fryer at 380 degrees for 5 minutes on each side for the first batch then lessen time for each batch since it is warmed up. However if you don't do the air fryer, the best way to do bacon as well is stove top with aluminum foil. A little olive oil, bacon, then cover with aluminum foil & cook on each side about 4-5 minutes on medium-- high heat. Flipping at the crispness you desire! Then set aside to cool


2. In same pan.. so no oil necessary OR if you didn't do bacon in the pan don't add oil--- put the tortilla & heat on medium heat on either side until it browns a tad


3. Then layer the pieces of lettuce, sliced tomato & avocado. Then sprinkle with EBB seasoning. Break apart bacon, then drizzle pesto over it all. Tuck in parallel short sides of the tortilla, the pull up on the the long side of the wrap closest to you & roll -- keeping the sort sides tucked in so it folds nicely!


Enjoy!! Seriously.. classic favorite.. done upgrade & DANG GOOD!
