Perfect Pear Crisp

I really do not know what got into me... but I am SO GLAD IT DID. I was thinking about making an apple crips & then I had these amazing pears on the counter. I was eating one for breakfast, and it hit me. I am going to stuff these bad boys with short cut granola, bake them & dollop some yummy coconut cream on top, drizzle with honey... BAM! SCRUMPTIOUS. No joke, this is the perfect healthy dessert or sweet treat for you. HAVE to make it now. I made it for our family night after the Chicken Piccata for dinner (coming soon!) They were so fun to serve & everyone got their own perfect one! I was able to whip them up so fast after dinner.



Ingredients:

The granola makes enough for 7- 8 halves. It stores well all week, so make as many Pear Crips as you want through the week! I will give you the instructions for the granola below for that many & walk you through what to do for each one.

Each pear will make 2 halves :) You will cut it half like you see above, serving two. So plan accordingly, if you want to serve 4, all you need are 2 pears etc.


3/4 cup old fashioned oats

1 tbsp maple syrup

2 tsp honey

1/2 tsp cinnamon

1/4 cup chopped pecans

1 tbsp shredded coconut

pinch of salt

1 can of coconut cream ( not milk, but the canned cream)

1 tbsp Coconut oil (plus just a tiny bit to rub on each top of the pear half)



Directions:

Preheat oven to 350 degrees

( Take coconut cream out the can & put into a tight lid container. Place in refrigerator right away. The cream can be used right out of the can. However, I like to have it harden, that way it becomes more condensed & creamy. It is perfect because it starts to melt a bit as you place on the hot crisp!)


1. In a medium sized frying pan add in 1 tbsp coconut oil on medium heat. Then in medium sized bowl add in oats, pecans, cinnamon, salt, coconut & whisk together. Then pour on top the maple syrup & honey. Stir until evenly covered. Then pour mixture in the frying pan & cook for about 7-10 minutes. You want it to get crispy, brown & toasted-- not burnt. So once you can start smelling it & the color is like above you are good to go. It will crisp more as it sits out too cool. (( THIS IS THE LONGEST STEP. So that is why I love to do this once & then you have the filling all week!))


2. Slice how many pears you are serving & cut out the middle with the seed & the stem. I like to cut out a little more in the middle to make a deep enough part for the granola to be filled in. Then place each half on the baking sheet with the inside facing up. Take a little bit of coconut oil & rub on the top of the inside. Bake at 350 for 5 minutes.


3. After baking the pears, take out & fill with the granola. Then place back in oven for another 5 minutes. Once 5 minutes is up place each pear half on a plate, scoop out a spoon full of coconut cream & place on top of the granola as seen above. Then drizzle with honey! VIOLA!!
