Perfect Egg Casserole

This is a super easy weeknight or weekend casserole. Perfect to make on a Sunday for mornings throughout the week or for a fun Sunday morning with the family :)

This recipe came from my Godmother and we have used for many special occasions, such as, Ainsley's first birthday party! The recipe normally calls for 4 pieces of bread, however, I had a great amount of stuffing cubes left over from Thanksgiving and herbed crostinies, so I crumbled those up instead. Turned out PERFECT and great way to use leftovers!


1 1/2- 2 lbs sausage cooked and drained

9 eggs beaten slightly

3 cups milk

1 1/2 tsp dry mustard

1 tsp salt

1 tsp ground pepper

4 slices bread cubed ( or 2 cups stuffing cubes or herbed crostines)

1 1/2 cups grated cheddar (12 oz )


1: Grease a 9 X 13 baking dish and spread the cooked sausage on the bottom of the dish

2: Beat the eggs and add the rest of the ingredients except for the cheese and whisk together

3: Next stir in half of the cheese ( about 6 oz )

4: Pour over the sausage, add the remaining cheese on the top, then cover and refrigerate overnight

5: Next day set oven to 350 degrees and cook for 1 hour
