Need a Little Zest in Your Life?

I think hands down these are my favorite pancakes I have made. Everything about them I love and I truly feel like I am eating a horribly bad for you blueberry lemon muffin because it tastes SO good and yet I am doing my body right with these ingredients :) Therefore, it is seriously a win win. I also was able to whip these bad boys up within 15/20 minutes, so dinner was a breeze! ALSO a win win, I mean am I right?
Ingredients:(( This recipe is to serve about 8, cut in half if needed-- however it is great to have breakfast for dinner and then have some left over for breakfast the next couple days!))
-2 cup whole wheat flour
-1 cup old fashioned rolled oats
-4 tsp baking powder
-2 tsp cinnamon
-1 lemon for zest (2 1/2 tsp zest) and 2 tbl of its fresh lemon juice
-6 oz fresh blueberries
- 4 tsp honey [I do not like putting honey in my teaspoons because I feel like it never comes out! So I will squeeze the honey above the bowl and count 1 one thousand, 2 two thousand for a tsp :) ]
-2 cups unsweetened vanilla almond milk
-1/2 tsp vanilla
-1/4 tsp Pink Himalayan salt
1: Put whole week and oats in a big bowl and whisk together
2: Take a small hole grater or zester and zest the whole lemon over a bowl--- if you have grated down the lemon you have zested too far, you want to zest right before/to the white part
3: Add the lemon zest, baking powder, salt and cinnamon into the big bowl and whisk together
4: In a medium sized bowl add all your wet ingredients and whisk together
5: Add your wet ingredients to your dry and mix thoroughly with a spoon
6: Lastly, fold in the blueberries
7: Once everything is mixed together you are ready to go! Add coconut oil, ghee or butter to the pan on your stove to medium heat and cook for about 4-5 minutes on each side, or until golden brown!
