With mid September rounding the corner, nectarine season is almost over. I have been scavenging the last good nectaries from the store, because I love them so much! So I decided I would post my nectarine pancake recipe that I sent out to my mailing list awhile back! In hopes this will help you use up some of those last amazing nectaries! See yummy details below!
Nectarine Buttermilk Pancakes
1 cup whole wheat flour
2/3 cup old fashioned rolled oats
1 tbsp coconut sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
dash of nutmeg
dash of ground cardamon (optional)
1 1/4 cup buttermilk
2 tbsp melted coconut oil
1/3 cup honey
1/4 tsp vanilla extract
1 cup fresh nectarines cut into small bite size pieces as seen above
1. In a large bowl sift whole wheat flour, baking soda, baking powder & salt. Then add in old fashioned oats. Next add in coconut sugar, cinnamon, nutmeg & cardamom & whisk together thoroughly.
2. In a MICROWAVE SAFE medium sized bowl add in coconut oil & microwave for 30 seconds to melt. Then add in eggs, buttermilk, honey & vanilla extract. Then whisk until thoroughly combined, where there is no separation of oil & rest of ingredients.
3. Then pour wet ingredients into the dry ingredients bowl & fold in to mix thoroughly with spatula. There will be some bumps & that is okay, that is the reaction of the buttermilk with rest of ingredients. Then fold in the nectarines.
4. Let batter rest for 5 minutes. Then lastly heat 1 tsp coconut oil on frying pan on medium heat & get to flipping these pancakes on your frying pan to your liking!! Enjoy with some greek yogurt on top, more nectaries & maple syrup!! Remember to tag me when you try so I can see what you all are making :)
