I love sandwiches, and this one is NO exception! It is super quick, easy and was inspired by a meal that we received last year in Home Chef. I love the new Fiesta shredded cheese that Whole Foods just got, so if there is not one around you, using a Pepper jack cheese mix would be PERFECT for this.
It makes 6 sandwiches, plus croutons for salad or my quinoa vegetable salad on the blog :) I froze a couple of them and they heat up really well in the oven in the aluminum foil I wrapped them in to freeze.
+6 mini baguettes @wholefoods 🥖 +24 oz baby Bella mushrooms ( I did a large 16 oz with a small 8 oz box ) +2 tbsp butter +2/3 cup of Cabernet +1/2 yellow onion diced +salt & pepper & garlic salt to taste +Olive oil & 3 gloves of garlic minced +Shredded cheese ( I just found this Fiesta mix from @wholefoods , that is PERFECT for this to add a special zing to it, to help it stand apart from the bread) Directions: Preheat oven to 350 degrees + Scoop out the insides of each baguette down to its crust. Save those for croutons— in a small bowl to the side ( that is what I topped on my quinoa lunch salad I was talking about 😊) + In a medium sized frying pan on medium high heat add a little bit of olive oil and the butter, then add in 1 garlic clove minced + onion. Allow to sauté then add in all the mushrooms sliced. Let them cook down for about 5 minutes before then adding the wine. Turn stove top to low medium & let simmer until mushrooms soak all the yummy liquid up + Next put 4 tbsp olive oil and 2 remaining garlic cloves in a small bowl and mix together. Next take a cooking brush and begin to brush the insides of the baguettes with this mixture. Place them crust side down, so the insides are facing up ready to be stuffed. Then divide out the onion, mushroom mixture to the deep half and top with the shredded cheese!! + Next toss bread crumbs in salt, pepper, garlic powder, etc. and place on the sheets next to the banquettes. Take it all out when they get brown and bubbly and put the two halves together!
