Mint Chocolate Chip Pancakes
I know it may sound crazy mint in the morning, but I LOVE it in the morning & really anytime when it is paired with chocolate. Mint chocolate chip is my ultimate favorite ice cream and so I had to give these a try with Rebbel Yerba Mate Mint Latte in place of milk. This provides your pancakes with a health kick without even knowing it! The latte has Moringa in it which is a super green as well as Matcha. You are going to go ga ga over them & want to use Rebbl in your pancakes from now on!
1 cup Whole Wheat flour
1/2 cup old fashioned rolled oats
1 tsp vanilla extract
1/8 tsp mint extract
1 cup Rebbl Yerba Mate Mint Latte ( almost the whole container leaves you about 4 oz)
1/4 cup honey
3 tbsp coconut oil
1 tsp matcha powder
1 tsp cinnamon
1/2 tsp salt

1. In a medium sized microwave safe bowl add in the 3 tbsp of coconut oil. Heat in the microwave for 30 second increments until
2. To let the coconut oil cool a bit before adding the other ingredients work on the dry. In a large mixing bowl combine flour, oats, matcha, cinnamon & salt & put aside.
3. Next add in the Rebbl, honey, eggs, mint & vanilla to the coconut oil bowl & whisk together until it is throughly all together.
4. Add the wet ingredients to the dry and fold in until incorporated. Then fold in Enjoy Life Chocolate chips. Now I do not tell you how much because I add in a lot hahah, so what ever amount works for you :) I say starting with 1/2 cup is always a good start and go up from there! Then heat 1 tbsp coconut oil in a frying pan on medium heat and fry those babies up and ENJOY your breakfast!!
