Mediterranean Layer Dip

I love easy dips to throw together for any occasion & with the next round of holidays coming up, I wanted something more on the healthier side that also packs a tasty punch! This also doubles as a lunch that is prepped & ready to go as well. As you can see on my instagram post I show you it as your next favorite appetizer to bring or when you host & also what I did to it for lunch in my favorite Kinsho Kitchen Bento Boxes! Ingredients For Basil Lemon Hummus:
1 15 oz can garbanzo beans
1 15 oz white cannellini beans
2 small cloves garlic minced
1 lemon juiced
1/2 cup chopped fresh basil
2 tsp tahini (optional)
1/2 cup olive oil ( I do 1/4 cup light olive oil & 1/4 cup regular) + may need more as you continue to blend
1/2 tsp salt & pepper to start with then add to taste
Whole Jared Pimentos to slice
Feta Cheese crumbles
+ Anything you'd want to dip with it!
1. In a high power blender add garbanzo bans & cannellini beans that are RINSED & DRAINED. Then add in the juiced lemon, garlic minced, fresh basil, tahini & then the olive oil on top. Add in salt & pepper, then start off on slow speed on high power blender & then increase. If you need to add more olive oil at a SLOW speed or a little water to continue to blend. DO NOT over pour olive oil or water, just slowly if need be.
2. Pour into whatever holiday container or storage container of choice. Then layer sliced pimentos, diced cucumbers, sliced cherry tomatoes & Kalamata Olives sliced. Then sprinkle with feta & fresh dill!
