Mason Jar Mediterranean Layered Salad

I am always looking for healthy quick lunches to be able to prep over the weekend, and this is exactly it! I am obsessed with the Mediterranean flavors, like feta & kalamata olives? Cannot pass it up! This light & fresh lunch will be a new favorite, cannot wait for you to make this for your next lunch prep!

Ingredients:

makes 4 mason jar salads


Salad:

1 head of romaine lettuce

1 can of garbanzo beans

4 oz jar of kalamata olives 5 cherry tomatoes diced

1/2 cup crumbled feta cheese

1/2 cucumber diced

1/2 juice of lemon

1/2 tsp dill

1/4 tsp salt


Basil Hummus:

1 can of white cannellini beans drained & rinsed

1/2 juice of lemon

1/2 chopped fresh basil

1 clove garlic

1/2 tsp salt

1/3 light olive oil

couple grinds of fresh pepper


Directions:

1. In a large mixing bowl add in drained & rinsed garbanzo beans. Then add in the feta cheese, sliced cherry tomatoes, chopped kalamata olives, diced cucumbers. Then pour lemon juice over the mixture, sprinkle dill & salt over it, toss until throughly combined.


2. Chop up the head of romaine lettuce & then set aside.


3. Next in high power blender add in the white cannellini beans drained & rinsed. Then garlic clove cut into three, lemon juice, basil, olive oil, salt, pepper. Then blend on low, then gradually move up to medium high. until fully incorporated.


4. Then you will start layering! At the bottom of the mason jars add in the romaine lettuce, then spoonful of hummus, then salad mix, then lettuce & a little more hummus on top. Repeat for all mason jars!
