Breezy Breakfast

Updated: Dec 18, 2018

I am very big on getting up in the morning and having as LITTLE to do as possible. I love to have it all prepped the night before. I do like my mornings, but that's just it-- I want to have a calm morning, I feel like it sets the tone for your day. In doing so I already have the coffee in the coffee maker ( with a tsp cinnamon) and I have my breakfast choices already made. Some of my favorite go to prepped breakfast choices right now are : Overnight oats, breakfast burritos, egg scramble bowls, energy balls, smoothies & pumpkin (seasonal) muffins.

Here I am going to share two of my favorite overnight oat recipes. I will add more to this page with my other favorite prepped breakfast choices a little later on.

Chocolate Walnut Cruncht (top left), Pumpkin Pie (bottom middle) & Berry Oats (top right)

Berry Beautiful Overnight Oats

-1 mason jar ( or I do as many as possible to prep them all together so I will have multiple throughout the week. Also Ainsley LOVES them, so they are very kid friendly)

- 1/2 cup old fashioned style oats

- 1 tbl flax seed

-1 tsp cinnamon

-2 tbl shredded coconut

-1/3 cup blueberries (or as many as you like!)

-2 strawberries cut up into slices

-1/2 banana smashed

-1 tbl maple syrup (( I would do this to taste! I don't like it as sweet, but you may! Try out honey as well--- it is also a great sweetener choice. )

-Fill with almond milk to the top bottom of the lip. Then wait for it to soak in and put the lid on top and shake that up. Then add right up to the bottom of the lid again. Put in the refrigerator and enjoy the next morning!!

*** In the morning I like to add BARE coconut flakes on top-- yummy crunch. Then I usually cook Wellshire's Turkey Peppered Bacon and have a couple slices with it.
