Honest Grub, Honest Foodie LUNCH WEEK breakdown

This week was a blast!! I loved more than anything being able to share lunch ideas with you all & my sustainable passion too. I think that we don't realize our carbon footprint on this world & a lot of times people scoff at it... like it is just me. Well what if EVERYONE said that... I mean the billions of people in this world... no wonder we are in trouble! I know it may not seem like you stopping plastic straws or water bottles would make a difference, but how many times in history have we seen the magnitude of one persons choices? So why not start now! Check below for all my lunch ideas throughout #HGHFlunch week & the links to my favorite sustainable products! HAPPY lunching everyone!
1. Banana Sushi
First up! 𝐁𝐚𝐧𝐚𝐧𝐚 𝐒𝐮𝐬𝐡𝐢 +1 @sietefoods cashew flour or wheat flour tortilla ( not regular flour, takes away from the taste) I really recommend the cashew flour, it has the perfect consistency & sort of sweeter taste for the sushi! +1 whole banana +1 tbsp almond butter +drizzle honey + @enjoylifefoods chocolate chips +shredded coconut Lay cashew flour tortilla out, spread almond butter layer all over the tortilla. Drizzle with honey & sprinkle shredded coconut then place banana on the far left side of the tortilla, then start rolling it up. Cut it into slices & then sprinkle more chocolate chips & coconuts ontop like pictured! 📸: stove top popcorn, nectarine, cucumber sprinkled with pink Himalayan salt & hard boiled egg with EBB seasoning!!!
2: Veggie Burger Bites
Here today on #hghflunchweek we have my @tavvakitchen containers & I’m obsessed. They are LEAK PROOF... let me say that again— they don’t spill! I use my salad dressing containers almost every lunch & the snack variety pack set to put crackers, chips or as 📸 a yogurt parfait set up!! So I took one of the big patties & made it into 3 little ones. Cooked them the night before & was ready for a more grab & go style of this meal. Go to dinner tab on blog for these!! + @latejulyorganic jalp+lime chips— taste like a cool ranch Doritos 😍 + @so_delicious yogurt parfait, with fresh fruit & @wholefoods trail mix. I also like to add my homemade crunch granola ( on blog under breakfast tab 🙌🏻)
3. UPDATED Lunchable
When you look on the back of the lunchable and see an ingredient like “ Lecithin For Slice Separation” you really could just try this above, & not have to think about letcithin being added inbetween your cheese & meat to keep it separated.😳 Where all lecithin isn’t bad, why do you need it in between there & where exactly are they deriving that certain lecithin from. There are just SO many questions when it comes to reading the ingredient list half the time, so I’m here to help you navigate through that & just get to the real stuff! So the ingredients I use above cut the original lunchables ingredient lists in half & make way for a healthy, satisfying & oh so tasty lunch time! 💓💓𝐂𝐨𝐧𝐭𝐚𝐢𝐧𝐞𝐫 𝐃𝐞𝐭𝐚𝐢𝐥𝐬: This brand is called @kinshokitchen who are based out of Boston, MA. Pictured is their stainless steel mini Bento Box Lunch-Box for boys/girls. 𝐈 𝐚𝐦 𝐬𝐨 𝐞𝐱𝐜𝐢𝐭𝐞𝐝 𝐭𝐨 𝐛𝐞 𝐩𝐚𝐫𝐭𝐧𝐞𝐫𝐢𝐧𝐠 𝐰𝐢𝐭𝐡 𝐭𝐡𝐞𝐦 𝐭𝐨 𝐠𝐢𝐯𝐞 𝐚𝐰𝐚𝐲 𝐬𝐨𝐦𝐞 𝐠𝐨𝐨𝐝𝐬 𝐭𝐨 𝐲𝐨𝐮 𝐓𝐎𝐌𝐎𝐑𝐑𝐎𝗪 🤩🥳🤘🏻This is just one of the many containers they have that are awesome. 𝐃𝐞𝐭𝐚𝐢𝐥𝐬 𝐛𝐞𝐥𝐨𝐰 𝐟𝐨𝐫 𝐭𝐡𝐢𝐬 𝐲𝐮𝐦 𝐲𝐮𝐦 𝐥𝐮𝐧𝐜𝐡👇🏻 📸LUNCHABLE +slices of @wholefoods uncured pep w/ no nitrates and/or added nitrates + @organicvalley mild white cheddar cheese +HG HF brownie chocolate chip dough bites +blueberry,raspberry&kiwi fruit skewers +carrots & peppers w/ HG HF ranch 🙌🏻🤤 + @latejulyorganic crackers of course with the fewest ingredients of a cracker brand I have found + NO enriched flour!
4. Tortellini Crunch Salad
FAVORITE lunch salad… I ate some while making it, during lunch & then when I got home lol. Sooooo someone needs to stop me.. +Tortellini Crunch Salad ** MY FAV** & it took me 2 seconds to put together -1 Aristola 8 oz cheese tortellini -1 ½ bags of veggie slaw ( I like one with cabbage, carrot, broccoli & cauliflower) -1/4 cup dried cranberries -1/4-1/2 cup feta -start with ¼ cup sesame sticks & go from there. I usually add in that & then ones the day of that I take it because they get a bit soggy if they sit overnight, not too bad. (I get them in the bulk section, but they usually have them in trail mix areas too) -1/4 cup HGHF red wine vinaigrette & 1/4 cup HGHF ranch. I usually do about half & half to taste *cook tortellini with regular box instructions, drain, let cool & rinse with cold water. Then in a large bowl add in slaw, cranberries, feta & sesame sticks. Then add in tortellini & toss with dressing, then refrigerate! +HGHF Banana Strawberry Muffin +EVERYTHING BAGEL @pretzelcrisps… the gods have answered!! +watermelon +4 slices of uncured hard salami
5. Roasted Red Pepper Hummus Veggie Sandwich
-Roasted Red Pepper Hummus:
+1/4 cup of roasted red pepper -- I put in oven at 400 degrees & spray each side of the whole red pepper, place on baking sheet & then roast 20 minutes on each side, let cool, de seed & use 1/4 cup of it
+1 can of while cannellini beans
+1/2 lemon juiced
+1/4 cup chopped fresh basil
+1/3 cup light olive oil
+1 clove garlic
+1 tsp salt
+salt & pepper to taste
1: In a high speed processor add in this order: lemon juice, olive oil, red pepper, garlic, beans, basil, salt & pepper, then process until throughly combined. Refrigerate for up to an hour before serving. The longer you let sit in the refrigerator for the first 24 hours, the thicker the consistency!
-Then I layered that hummus on two slices of seed seduction bread from Whole Foods, a piece of havarti cheese & all the veggies I could get my hands on!
-Then stuffed large medjool dates with almond butter & sprinkled with with chocolate chip & white chocolate chips
-Skinnypop white cheddar pop cakes
-Bananas, blueberries & strawberries
-Hardboiled egg with EBB seasoning
6. Apple Nacho Bar
- Slice 1 whole pink lady apple into ring slices, take a knife & circle out the middle of each slice. Then I put toppings in one side of the container: blueberries, sliced almonds, chocolate chips & coconut flakes
-Packed almond butter to spread on top
-Snap pea crisps
-Small salad with HG HF red wine vinaigrette: artichoke hearts, tomatoes, cucumbers & sliced parmesan cheese
7. Salami Pickle Cream Cheese Roll Ups
** I use to love getting notes in my lunch from my mom, so why not write one to myself on this one :)
-Use one flour tortilla & spread cream cheese on the inside. Layer with salami & then pickle spears cut into 3 smaller spear pieces to layer better on the inside. Roll & cut into pieces as see above
-Small house salad with HG HF balsamic vinaigrette
