Healthy Salmon Tacos with Easy Tangy Slaw

Are you ready to spice up your Valentine's Day or Galentine's Day?! This recipe is the perfect fit! Now, it doesn't have to be just for those special occasions, because dinner under 30 minutes is perfect ANY TIME. However, I could eat tacos religiously & if my special someone or my gal pals are dreaming up a taco night--- I AM IN :)


These tacos can be prepped ahead of time for easy assembly. I was so lucky to work with Mann's vegetable company, a company that started about 80 years ago! A family run business, that wants to get fresh food to the table fast for families. Their packaged blends are always a go to in our house. The Mann’s Kale Beet Blend, makes throwing this special dinner together so easy. You make the slaw the night before, let the flavors really meld. Put the marinade on the salmon before you leave for work, then pop the salmon in the oven, warm up the tortillas & top with the yummy slaw-- YOU, ARE, A , WINNER!

Ingredients:

Salmon Marinade

2 6oz Atlantic Salmon

1 cup soy sauce

1 tbsp chopped ginger

2 clove garlic

1 tsp salt

3 tbsp sesame seed oil

2 tbsp honey


Salmon Slaw

1 package of Mann’s Kale Beet Blend

3/4 cup sour cream

1 tbsp sesame seed oil

1 tsp honey

1/4 tsp ground paprika

1 tsp salt

1 clove garlic

1/4 chopped cilantro

1 mango diced


Directions:

1. In a 8in 2qt pan lay your 6oz salmon in the dish, skin side down & flesh side up. In a medium mix bowl add in 1 cup soy sauce, 1 tbsp chopped ginger, 2 cloves garlic, 1 tsp salt, 3 tbsp sesame seed oil & 2 tbsp honey. Then whisk until fully combine. Pour over the tops of the salmon & then flip over the salmon to skin side up & flesh side down into the marinade. Refrigerate for an hour.


2. Pour Mann's Veggie Kale Beet Salad mix in a large mixing bowl. In a small bowl add in sour cream, 1 tbsp sesame seed oil, 1 tsp honey, 1/4 tsp ground paprika, 1 tsp salt & 1 clove garlic minced. Then mix throughly until all ingredients are combined. Then pour the dressing over the slaw. Mix the dressing into the salad, until completely covered. Then add in diced mayo & chopped cilantro. Then refrigerate as well until salmon is done.


3. Preheat oven to 375. Once the salmon is done marinading & the oven is preheated transfer salmon to a clean baking dish sprayed with olive oil. Place the filets in there flesh side up. Pour a little bit of the marinated over the salmon-- make sure you get some ginger laying on top. Then bake for 20-25 minutes. 20 minutes cooks it perfect in my oven.


4. Once the salmon is done take each filet & set it on the cutting board to rest for a couple minutes. Then you can start layering your tacos! The salmon will flake off perfectly from the skin. Then place salmon in the middle of tortilla of choice & smother with slaw on top. Then dig in!
