Healthy Homemade Mac & Cheese

I am going to be honest, I mean how many of us grew up on Krafts Mac & Cheese? I mean college I survived on Velveta Mac & Cheese or Kraft, that you heated up in the plastic containers. Oh dear. The Coalition for Safer Food Processing and Packaging did a test of 30 different cheese products & they found " all but one one contained chemicals called phthalates, man-made substances that have been shown to interfere with human hormones. The highest levels were found in the cheesy powder used to make the sauce for boxed macaroni and cheese." (https://www.today.com/health/how-harmful-are-chemicals-your-boxes-mac-cheese-t113868)


So needless to say, the one brand I do trust for boxed Mac & cheese in Annies Homegrown. However, when I am feeling fancy & want to make the real deal, I turn to this SIMPLE & DELICIOUS solution. Who needs chemicals & powder :) Check details below!



Ingredients:

4 servings


-10 oz Penne Pasta

-2 tbsp unsalted butter

-1/2 cup milk of choice + a bit extra to thin if need be ( we use whole milk for A)

-2 tbsp Organic All Purpose flour

-1/2 cup shredded Fiesta cheese (spicy cheese)

-1/2 cup shredded Monterey Jack cheese

-1 cup greek yogurt

-1/2 tsp paprika powder + more to taste

-1/2 tsp garlic powder + more to taste



Directions:


1. Cook Penne pasta as it says so on the boxed instructions & then strain. Then it will be ready to throw into the yummy cheese sauce.


2. In a large stove top pot at least 6 qt. add 2 tbsp butter at medium heat. ( I attached my favorite one here) Then pour in the milk as well, and let it melt down & stir together. Once fully melted add in the flour & whisk until flour has fully combined with the milk & butter. Then add in both of the shredded cheeses & greek yogurt. Stir on medium heat until fully melted. You do not want it bubbling over. At this point slowly add in milk if a thinner consistency is needed. You want it to be creamy not stringy. So if it is a bit stringy still add it a bit more milk & a bit more greek yogurt. Lastly add in the garlic powder & paprika. Add more in to taste.


3. Lastly pour in strained pasta & stir until full incorporated. Put on low for 5 minutes to let it cook a little bit together.


4. PRO TIP. If you want to add breadcrumbs to the top like I did above, add to an oven safe ramekin(follow link here) & sprinkle crushed croutons over the top. Then put on in oven on broil until the top becomes crispy [feel free to add more cheese on top :) ] OR I choose to put it in the ramekin & add it to my air fryer (the one I use right here) at 320 degrees for 5-7 minutes.
