Healthy Hack Chicken Salad

I love chicken salad & to be honest a lot of times I put off making it because of having to boil the chicken. I have a recipe I will share later that has you do that too :) So when I am feeling crunched on time & need to get dinner on the table ASAP... as in any day during the week hahah, I use this recipe! Seriously... so good & tastes even better the next day or refrigerated for at least an hour! Enjoy & get to putting your feet up a little bit sooner during the week!
-1 1lb 13oz Rotisserie Chicken ( I get mine from Whole Foods & the traditional kind! Roughly that size will get you about 5-6 servings.... usually 4-5 for us because we love it so much lol )
-2 celery stalks chopped finely
-1 carrot finely shredded
-1/3 cup chopped yellow onion finely
-2 tbsp fresh chives chopped finely
-1/3 cup sour cream ( I love Organic Valley)
-2 tbsp Kite Hill Chive Cream Cheese ( feel free to use Dairy Cream Cheese, but this is really good to use, trust me, also lowers the fat content with mayo & calories)
-2 tbsp light olive oil
-1 tbsp white wine vinegar
-1 garlic clove minced
-1 tsp salt & pepper to taste
1. In a large bowl pull apart the Rotisserie Chicken in small bite size pieces. Then add in chopped celery, onion, minced garlic, shredded carrot ( I use a cheese grater) & combine well together.
2. Next add in cream cheese, chives, sour cream, white wine vinegar, light olive oil, salt & pepper. Mix until fully incorporated & serve on romaine lettuce & or slider buns .Also top with chopped pecans & enjoy!!!
**If you are wanting a little bit of spice to it, add in a little bit of paprika & or cayenne pepper
