Ginger Garlic Asian Meatballs

So talk about a major flavor upgrade to meatballs... these are DELICIOUS. Honestly, I feel like I am at a Chinese restaurant ordering these & then actually feeling good afterward. Don't get me wrong.. I love ordering Chinese foods, however then I am in a massive grease comma afterwards. Let me tell you-- these give you the BEST OF BOTH WORLDS!!


Makes 18 meatballs ( 4-5 servings)

1 egg

2 lbs ground chicken thigh

1 cup Italian bread crumbs

1 tbsp minced ginger

2 cloves minced garlic

2-3 tbsp fresh chopped green onions ( I prefer 3, depends on onion preference)

2 1/2 tbsp fresh chopped cilantro

1 1/2 tsp salt

1 large carrot grated

2 dashes ground turmeric

1 dash cayenne pepper

1/4 cup soy sauce

1/4 cup honey

2 tbsp Sesame Seed oil

1 tbsp lime juice

Sauce to drizzle on top:

1/4 cup soy sauce

1/4 cup honey

2 tbsp Sesame Seed oil

dash salt

& whisk all ingredients together until well combined

Cook rice of choice due to package instructions


Preheat oven to 400 degrees

1. On a large cutting board, mince fresh ginger with your knife (pretty fine pieces), chopped green onions the same as well, mince garlic with garlic press & chop cilantro. Place all these ingredients into a bowl & set aside.

2. In a small bowl whisk soy sauce, honey & sesame seed oil until fully combined & set aside.

3. In a large bowl add chicken thigh, egg, bread crumbs, salt, cayenne, turmeric & then grate large carrot over the bowl on the smallest setting. Then pour in the ginger mixture from above. Then the soy sauce mixture. Take a spatula & start mixing the mixture until throughly combined. Take your time & make sure that every bit is mixed in. Then drizzle the lime juice on top again & mix another time well.

4. Then line baking sheet OR use your Silpat like I use & start purportioning the meatballs out. Try & make them as close in size as possible in order to cook evenly.

5. Bake for 18-20 minutes at 400 degrees. Check at 18 & then add on minute by minute if need be!

6. Serve on top of cooked rice & serve with the sauce above & steamed cabbage like pictured. Also I sprinkled some sesame seeds on top :)!
