Energy Bites of Goodness

These are perfect snacks, perfect for lunch, perfect for a late night sweet tooth craving... perfect, perfect, perfect! See the pattern here? :)


SUPER EASY and use a lot of the ingredients you already have in your pantry!

Peanut/Almond Butter Energy Bites

Ingredients:


-3 cups old fashioned rolled oats

-1 cup shredded coconut

-1/4 cup flax seed

-2 tbl ground cinnamon

-1/2 cup maple syrup

-1 cup almond butter

-1/2 cup peanut butter (( sometimes I will add more ))

-1/8 tsp vanilla extract


Directions:

- Mix all the dry ingredients in a medium sized bowl and set aside

-Whisk all the wet ingredients well in a large sized bowl

-Next add the dry ingredients in with the wet and mix well with a large spoon or your hands

-Then mold them into bite sized balls like you see above in the picture

-Place in a deep cooking sheet lined with parchment paper

-Keep molding them and placing in the deep cooking sheet until there is no more :) You may just be tempted to eat the whole thing! (NO judgement)
