Egg-celent Egg Salad

When I was little I always brought my lunch to school. Now looking back on it, I feel very fortunate that my mom always made my lunch and filled it with healthy choices for me. However, from an 6 year old perspective I was mortified when I had egg salad or tuna salad. I loved it don't get me wrong and that is why I would secretly want my mom to pack it, but then I had to open the container and get the ewwwwws from everyone around! I would hide my lunch box underneath the cafeteria table... like that would help hahah. However, I know after feeding this to Ainsley and my tuna salad... she will go through this same thing when she is 6, because it is just too darn good!! :)





Ingredients:

9 hard boiled eggs ** I will give instructions to boil them below**

3 tbsp mayonnaise

1 tbsp sour cream

1/4 cup yellow mustard

1 tbsp sweet relish

4 slices Welshires Turkey Peppered bacon cooked

2 green onions chopped

1 tsp garlic salt

1 tsp paprika

salt and pepper to taste

dash of cayenne pepper


Directions:

1: Mash the hard boiled eggs in a medium sized bowl

2: Add in the mayo and mustard and continue to smash, it is easier once those two are added

3: Add in the rest of the ingredients, adjusting the seasoning to taste

4: Cut up the bacon and stir in as well, leaving a couple pieces for the top as seen in the picture

How to hard boil eggs:

1:Place eggs in a 2 1/2 quart sauce pan and add water just to cover the top of the eggs

2:Bring to a roaring boil

3:Once it is brought to the boil, put the lid on and turn the heat off

4:While staying on the same burner, set the timer for 15 minutes

5:Once the timer goes off, run under cool water immediately and add ice cubes to it

6:After you have done that a couple times, I let it sit in a couple more ice cubes and cool water before I start cracking :)
