Date Chocolate Stuffed Banana Bread

Date Chocolate STUFFED Banana Bread... DCS Banana Bread... YES! So this all came about when my sister dropped off some pretty ripe bananas before her honeymoon trip. They were bananas where lets face it they would not see tomorrow. I HATE throwing away food, especially bananas, because I love to bake with them & not everyone has the luxury of food, so it was 9 o'clock at night after I had played volleyball & I was in the kitchen making up a new bread lol. I LOVE my whole wheat banana bread from my EBOOK, however I decided to make a different version that was stuffed, had cinnamon in it & had caramelizing dates & also was dairy free ( no butter) .... can you say WIN! I am feeling like I am this close to saying this maybe my new favorite...... I love the classic, but this is the bad boy we all will love now! (Could be all the Veronica Mars I am watching right now influencing my references!)


Preheat oven to 375 degrees

1 3/4 Whole Wheat flour

2 eggs

1/2 cup coconut sugar + 1/4 cup coconut sugar

1 tsp baking powder

1 tsp salt

1 tsp ground cinnamon

1/2 tsp baking soda

1 tsp vanilla extract

4 small ripe bananas

5 tbsp coconut oil melted

1/2 cup Enjoy Life Chocolate Chips

20 pited dates

1/2 cup water


1. In a medium sized sauce pan add 20 dates pited & 1/2 cup water & 1/4 cup coconut sugar. Bring to a boil & then bring to an active simmer for about 10-15 minutes. Occasionally breaking apart the dates, smashing them with a for or spatula & making sure it doest burn. Then set aside on the back burner

2. In a large bowl sift whole wheat flour, baking powder, baking soda & salt into the bowl. Then add the cinnamon & 1/2 cup of remaining coconut sugar, then whisk together with a fork & set aside. In a medium sized bowl add the coconut oil & melt in microwave for 30 second increments. Then let cool while you smash all the bananas in a medium bowl.

3. In the same bowl you mashed the bananas add in the coconut oil, vanilla extract & eggs & whisk until fully combined. Then add in the wet to the dry ingredients bowl. Fold together with a spatula until all the ingredients are throughly incorporated. Then in your bread loaf tin about 8½" x 4½" x 2⅝"-deep, grease the sides with coconut oil. Then add in half of the mixture. Then spread the caramelized date mixture on top of the 1st layer. Then sprinkle the 1/2 cup of chocolate chips over the date mixture. Then pour the second half of the bread mixture on top & spread evenly as well!

4. Then place in oven for 45-50 minutes at 375 degrees. Check at 45 minutes with the tooth pick test:) Then let cool before digging in... but really I couldn't, so would not judge if you couldn't either!
