Creamy Caramelized Banana & Apple Oatmeal

Ainsley and I make our creamy oatmeal bowls probably at least 3 times a week! Honestly, my opinion is that the best oatmeal bowls need to be made with milk or your choice of non dairy milk--- no water. Also so so so much better over the stove not in microwave :) OKAY, it can be done with water & microwave of course, but let me tell you this takes it up 20 notches, thank me later!


Serving Size: This makes 1 large bowl or 2 small ones ( Ainsley & I can usually split this, unless we are both super hungry!)

1 cup milk or non dairy milk of choice ( I have used whole milk & almond milk in it)

1/2 cup old fashioned rolled oats or GF

1 banana whole (ripest) & 1 banana sliced (not as ripe)

1/2 apple cored & diced

1/4 cup shredded coconut

1/4 cup blueberries

1/8 cup raw walnuts

1-2 tbsp maple syrup (2 tbsp if you want it sweeter, the riper the banana the sweeter it will be always)

1 tsp cinnamon + more for carmaelizing (or more depending on your love for cinnamon... I LOVE cinnamon so do a little more)

1 tbsp coconut oil

1/2 tbsp coconut sugar


1. In a large frying skillet add the coconut oil & heat on medium heat. Allow to get hot, then add in the sliced bananas & the diced apples. Then sprinkle with coconut sugar & cinnamon. Cook the apples & bananas on the frying pan in the coconut oil until the start to caramelize. Continue to move around the pan every couple minutes or so. Takes about 3-5 minutes. Really ripe bananas will turn into more mush ( STILL YUMMY!) However, if you want the banana slices that hold their own when caramelized a just ripe yellow banana works perfect. I do it with whatever bananas I have, but wanted to make sure you all knew when choosing. Then set aside as you work on the oatmeal.

2 . In a medium sauce pot add in oats & milk & tsp of cinnamon. Whisk together with a large whisk ( having a whisk is very important on this step, because it doesn't get as hot on your hand. I have done with a fork, but prefer my whisk!)

3. Then turn on high heat. Once it starts to bubble you will continue to whisk constantly the rest of the time to avoid sticking. Keep whisking until it becomes thick & majority of the milk liquid has been absorbed with the oats. This takes about 3-5 minutes. Then take off heat & add in the ripe banana & maple syrup. Mash down the banana into the oats with the maple syrup on top, mix until throughly combined. Then add on heat for just another minute while stirring.

4. Pour oatmeal into your bowl & top with your caramelized apples & bananas, blueberries, walnuts etc! Your choice! ENJOY! This will make your morning rock :)
