Cilantro Avocado Chicken

I threw this together during conference week and boy am I glad I did! This is something that will become a regular whenever I have left over chicken or my favorite homemade chicken strips. It is SUPER easy and bursting with flavor! I usually like making my own dressings, however when I do not have the chance to I love using Bolthouse Farms yogurt dressings. I went to Whole Foods to get the ranch dressing for our homemade chicken fingers that week and they were out! So I was looking through the others that might sound good with chicken fingers and stumbled upon the Cilantro Avocado dressing-- all things happen for a reason right :) Go ahead and be the happiest possible for lunch, by following the recipe below. If you have NOT made the homemade chicken strips... STOP NOW ( don't have to...) and go to Savory Sunday Football post in my blog, it is is under dinner sub category and try the chicken fingers. Then you will have left overs for this recipe too! I also made this with left over chicken from a rotisserie the other night.




Ingredients:

1 piece of whole wheat naan bread (can use tortillas, but naan is the way to go!)

1 1/2 pieces of chicken fingers sliced

2 pieces of bib lettuce

1/2 avocado

2 slices tomato

Bolthouse Farms Cilantro Avocado yogurt dressing


Directions:

1: Heat a frying pan with a little bit of olive oil on medium heat

2: Place naan bread on each side for 1 to 2 minutes-- this gets it nice and toasty for your sandwich/flatbread yumminess!

3: Place the lettuce down first, then slices of chicken, next put the avocado and tomato on top

4: Drizzle yogurt dressing on top of the whole thing... try hard not to pour the whole bottle on it!
