Chocolate Covered Strawberry Overnight Oats

I love making overnight oats! It has always been one of Ainsley's favorite breakfasts since I can remember & my mom is obsessed when I make them as well. I also love making a big batch that then can be for both Ainsley & myself for multiply days throughout the week! I also love how versatile they can be. We normally do a berry one, with blueberries, bananas & strawberries-- our classic go to! However, when I tried Organic Valley's ULTRA chocolate milk, I was IMMEDIATELY impressed, because it has 50% less sugar than regular chocolate milks & 13g of protein in one serving. WHAT? I know right.... So when Ainsley & I were sipping on it, I looked down at my grocery haul, saw my strawberries & the idea just hit me. HECK YES. I love chocolate covered strawberries, so why not give it a healthy twist for breakfast? I can dig it. The day I made it, it did not last "over night" until I had snuck one, two.. maybe three bites. Needless to say, cannot wait for you to fall in love with this like us!


1 cup Organic Valley ULTRA Chocolate milk ( or your chocolate milk of choice)

1/2 cup old-fashioned rolled oats

2 tbsp shredded coconut

2 tsp wheat germ

1/4 cup Enjoy Life Chocolate Chunks ( or chocolate of your choice)

6 strawberries diced


Makes 2-3 servings

1. In a medium sized bowl add in oats, chocolate milk, coconut & wheat germ. Stir until fully incorporated. Then dice up your strawberries into bite sized pieces. Throw those into the bowl along with chocolate & give it another stir.

2. Refrigerate over night! Then in the morning, scoop out how much you want, top with more chocolate or strawberries if you heart desires & ENJOY! How simple & delicious :)
