Chocolate Chip Brownies
Dive right into these gluten & dairy free chocolate chip brownies! I love that they are pretty much guilt free ;) While having the right balance between gooey & firm! Do not forget the chocolate glaze, that is basically the icing on top of the cake.. or brownie. Once again Ainsley is my test subject and I wish I had a picture of her face after :)
3 tbsp coconut flour
1 tsp vanilla extract
1/2 cup coconut sugar
1/3 cup maple syrup
1/4 tsp Pink Himalayan Sea salt
2 tbsp almond butter
1 cup Enjoy Life Chocolate Chips
1/2 tsp baking powder
1/2 cup coco powder
3 tbsp coconut oil melted
3 tbsp Enjoy Life Chocolate Chips
1 tsp coconut oil
(heat in microwave together for 15 second intervals until creamy and melted)
Grease a 9 X 11 baking dish with coconut oil or whatever greasing oil you use
Preheat oven to 350 degrees
1. Combine all the dry ingredients except the chocolate chips into a large mixing bowl : coconut flour, coconut sugar, salt, baking powder, coco powder & whisk together
2. Next in a small bowl combine all the wet ingredients: eggs, vanilla extract, maple syrup, almond butter. & coconut oil
3. Add the wet ingredients to the dry and mix throughly. Then pour in the chocolate chips & fold them in. LET IT STAND FOR 10 MINUTES. It is important to let the batter rest. I usually clean up the kitchen at this point. Then pop them in when done cleaning. Then pour the delicious mixture into the baking pan. Even out with a spatula. Bake in the oven for 10-15 minutes. Check at 10 minutes using the tooth pick test :) Keep any eye out until it comes out clean!
4. Once you take them out of the oven, let them cool for about 10 minutes until you add the Chocolate Glaze ( see instructions above). Do not forget this part :) The glaze cools really nicely and holds to the brownie for days t come... not that they will be around that long!
