Keto Chive Carrot Fritters

These are SO tasty & perfect for upgrading so many meals. For example, these are just the right thing when needing a quick appetizer for guests. Ainsley also eats them as is for her dinner or half of one for a snack. I love to put fried eggs on top of them & use as GF option for breakfast... I MEAN the options are endless. These will have all your guests & yourself coming back for one more... two... maybe three ;)


These babies have only 8 ingredients, and are prepped ready to pop in the oven in under 10 minutes!


Ingredients:

4 large carrots ( love to do the rainbow carrots, so 1 purple, 1 yellow & 2 orange)

1 egg

3/4 cup Monterey Jack Cheddar

2 tbsp almond flour

1 tbsp chopped chive

dash of cayenne pepper

1/4 tsp dill

1/4 tsp salt


Directions:

Makes 6 patties

Preheat oven to 425


1. In food processor shred the carrots then transfer to a medium bowl. Then add in egg, almond flour, chopped chive, cheese, dill, cayenne & salt.


2. With a fork whisk together ingredients until throughly combined. Then divide out batter so you form 6 patties. Flatten in your hand, about 1/4 inch thick, round in hand & then place on baking sheet with parchment paper or on Silpat.


3. Bake at 425 degrees for 10 minutes, then with a spatula, carefully flip them & bake for another 10 minutes until they start to get crisp. Then enjoy! Dollop of sour cream or any of the suggestions above!!


Reheating Instructions: LOVE to reheat in the in the air fryer on fry setting for about 3-5 minutes. Reheat in oven at 425 for a 3-5 minutes as well.
