Chicken Soft Tacos

There is always a dilemma with what to do with the leftover turkey or chicken from Thanksgiving. A lot of times we do sandwiches, but get bored of that! So we love to make these soft chicken tacos, so easy, so simple & who can say no to tacos?? I mean... no one! :) Also check out my highlights on instagram( @honestfoodie_blog) where I am sharing the other ways to use up that extra meat from Thanksgiving! I hope you all had a great one!!


1 large chicken breast or turkey breast

6 flour corn 6in tortillas

1/3 cup your favorite salsa

2 tbsp fresh chopped cilantro

1/4-1/2 cup shredded cheese (we like mixture of pepper jack & Monterey Jack)

pinch of salt & garlic salt


Preheat oven to 350 degrees

1. In a large bowl shred the chicken breast or turkey breast into bite sized pieces. Pour salsa, cheese, cilantro, salt & garlic salt over the chicken & mix throughly.

2. On a large baking sheet line the 6 corn tortillas & divide chicken mixture on half of each of the tortillas. Then sprinkle more cheese on top if you'd like. Then fold in half. Take a plate & press down on the taco so that it presses it down, to insure it doesn't pop back up when you make. Apply firm pressure. Repeat for all the tacos & then spray with avocado or olive oil spray. Bake at 350 degrees for 8-10 minutes or until sides are crispy & cheese is bubbly!
