Chicken Mediterranean Salad with Homemade Tzatziki

I am always on the look out for a quick & easy lunch. So this weekend, look no further than what to whip up for this weeks! I know that you can always buy Tzatziki at the store, however, it is so much better taste wise & health wise, when you make your own. No additives to keep it "fresh" & you have full control of knowing what goes in it. It takes 2 seconds, so just trust me & make the homemade sauce to go along with it :)


Ingredients:

Makes about 6 pita wraps

Tzatziki Sauce:

1 cup Greek yogurt

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp white wine vinegar

1 tbsp mayo

1 tbsp buttermilk

1 cup grated cucumbers & strained with a cheese cloth ( about 2 medium sized cucumbers)

1/2 tsp dill

1/2 tsp salt

1/2 tsp pepper

Directions:

1. In a bowl whisk together yogurt, olive oil, lemon juice, white wine vinegar, mayo & buttermilk. Then grate 1 cup of cucumber with skin on. Then pour onto a cheese cloth square & squeeze out all the excess liquid in the sink. Then scrap out of cheese cloth into the bowl with the other ingredients. Then add in dill, salt & pepper. Whisk until full incorporated, & refrigerate while you get the rest of the meal ready.


Chicken:

3 pounds chicken

1 tsp ground basil

1 tsp ground dill

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp cayenne pepper

1 1/2 juiced lemon

2 tbsp olive oil

Directions:

1. Slice chicken into 1in strips and place all of the strips into a medium sized bowl. In a small bowl whisk together ground basil, dill, onion powder, salt & cayenne pepper and set aside. Next pour lemon juice over the sliced chicken & mix with your hands. Then sprinkle the seasoning on top & continue to mix. Then in a skillet on medium heat add 2 tbsp oil oil and cook on each side about 2-3 minutes until no pink through.


Greek Salad:

1 15oz can of chickpeas drained & rinsed

1 cup black olives sliced

3 tbsp fresh chopped basil

1 pint cherry tomatoes sliced into big or smaller chunks depending on what you would prefer

1 cup crumbled feta

1 cucumber chopped into bite sized pieces.

Directions:

1. Place all ingredients in a large mixing bowl & sprinkle with salt & pepper

Assembly of the Pita Wrap:

1. Place warmed pita bread on plate

2. Then layer the Greek salad on top of the pita

3. Next break apart pieces of the chicken strips & put that on top of the salad

4. Lastly, drizzle your yummy sauce over the top & wrap it up!


VIOLA! SO SO yummy & for a low carb option, in my lunch I would just do everything mentioned above but without the pita & it works perfect!
