Cheesy and Easy

Need a quick fix for dinner this week? Look no further! I love these meatballs because they cover majority of the food groups and are taste tested approved by every family member. Ainsley is still not sure about meat, however she cannot get enough of these! I hope you all enjoy!


-3 lb ground chicken thigh

-1 cup whole wheat bread crumbs

-3 eggs

-1/2 cup chopped onion

-4 minced garlic cloves

-1/4 up lemon juice

-4 tbl cilantro chopped finely

-1 1/2 tsp garlic powder

-1 1/2 tsp oregano

-1 1/2 tsp paprika

-1 tsp pink Himalayan salt

-1 tsp ground pepper

-1 cup shredded mozzarella cheese

-1 cup shredded Monterrey cheddar/mild cheddar blend


1: Preheat oven to 400 and get you baking tray out and either line with parchment or use your Silpat or invest in a Silpat (highly recommend!)

2:Combine chopped onion, cilantro, minced garlic and lemon juice in small bowl and set aside

2: Combine all the dry ingredients (garlic powder, oregano, paprika, salt, pepper and bread crumbs) and set aside

3: Scramble 3 eggs in another bowl and set aside

4: Place ground chicken in a bowl and pour the dry ingredients and 3 eggs in and mix thoroughly. I hate using my hands so I will take a big spatula and mix it around well! :)

5: Next put the onion, cilantro, garlic and lemon juice mixture in and mix well

6: Lastly add the two cups of cheese in and mix well

7: Take a spoon and make individual meatballs the size of about a golf ball and line your tray

8: Bake at 400 for about 20-25 minutes until they are cooked through

9: Dip in BBQ sauce, ranch, marinara sauce etc. OR we like to eat them with whole wheat pasta with Vodka Red Sauce from Thrive Market :)

However you eat them, you will love them! Enjoy!
