Cheese & Sausage Lasagna Roll Ups

These roll ups are super yummy and a quick solution to week night dinner or a meal prep on Sunday to pull out during the week!
The roll ups would be great with just the cheese fillings, however I like the add of Italian sausage, you cannot go wrong with that :)
15 oz container of Ricotta cheese
3 cups of mozzarella cheese
2 cups chopped spinach
1 tsp oregano
1 tsp parsley
1 tsp basil
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1/2 pound of Italian sausage
1 package of Lasagna Noodles
2 jars of 365 Vodka Cream Red Sauce
Fresh basil for garnish
Preheat oven to 350 degrees
1: In a medium sized bowl, mix together Ricotta, mozzarella, spinach and all the spices together and set aside
2: Start the Lasagna noodles per box directions, while that is cooking start on the sausage
3: Cook the Italian sausage until there is no pink on medium/high heat on the stove. Season with garlic powder, salt and pepper to taste. I put a dash of cayenne pepper as well:)
4: Set the Italian sausage aside.
5: Once the noodles are done run cool water over them to keep them from sticking. Then place a towel on the counter top and lay the noodles on top and pat them to get the excess water off
6: Mix the sausage in with the cheese mixture and start spooning 2 spoon fulls of mixture onto each noodle and spread it about 3/4 of the way up the noodle and then roll them up
7: Pour 1 cup of the red sauce at the bottom of a 9 X 13 pan and then start lining up the roll ups
8: Once all of them are rolled up and placed in the pan, pour the remaining sauce over the roll ups. I put a second jar because we like more sauce and I normally use about 1/2 cup more from the second jar. However, one jar does seem plenty :) Then sprinkle the top with more mozzarella cheese to cover them.
9: Cook in the oven on 350 for 20-25 minutes or until the cheese is melted the way you want it. I keep it in the full 25, I like the cheese to start to get a little brown!
