Birch Bender Banana Muffins

I love Birch Bender brand of waffle & pancake mix! When I went to Costco this past week they had a 42 oz bag of the Paleo kind and I had never had it before-- I normally get the Blueberry kind ((which is also YUM)) So I decided to make a banana muffin using the paleo mix & boy am I glad I did... look at that beaut below!! Super easy, super simple, real food & real ingredients, in minutes!



1 cup of Paleo Birch Bender pancake & waffle mix

1 tsp of cinnamon

1 tbsp coconut sugar

1 ripe banana

1 tbsp of melted coconut oil

1/2 tsp vanilla extract

3/4 cup of unsweetened vanilla almond milk

1/4 cup of toasted pecan pieces ( put raw pecan pieces in a frying pan and let it toast on medium heat for about 2-5 minutes turning them over)


Makes 12 muffins

1. Pre heat oven to 350. Put the cup of Paleo Birch Bender mix, cinnamon and coconut sugar in a medium sized bowl & whisk together

2. In a small bowl mash the ripe banana, pour in melted coconut oil & vanilla extract and mix together. Add in almond milk to the Paleo Birch Bender mix bowl, and mix well, then add in the banana mixture.

3. Line cupcake pan with liners and pour batter evenly among the cups & top with toasted pecans before baking for 16-17 minutes, until it pasts the tooth pick test :)

Top with melted Enjoy Life chocolate & drizzles of almond butter and you have yourself a winner!!
